In a small bowl, whisk the egg.On a double boiler on medium low heat, melt the chocolate with the melted butter. I suggest that you whisk the ingredients as they melt together. Once melted, take a tablespoon of the melted chocolate and stir it into the whisked egg. Then transfer the whisked egg and chocolate back to the double boiler. Cook for one minute then remove from the heat. Allow this to cool for ten minutes gently stirring after five minutes.
Once the chocolate has somewhat cooled, transfer it to a mixing bowl. Then fold in the marshmallows and the nuts. Refrigerate for a half hour.Step Three: finish the cookies.Line a log shaped pan with wax paper. If you do not have a log shaped pan, simply use a rimmed baking sheet as you can easily shape your cookies into a log instead.Sprinkle half of the coconut on to the wax paper that you prepared earlier. Then transfer the cookie mixture to the wax paper lined pan or sheet. Sprinkle with the remaining coconut so the the log is evenly covered. Seal the wax paper around the log (twisting the ends of the wax paper works well).Refrigerate or freeze until firm. Then cut the log into ¾-1" wide slices and serve.
