Instant Pot Caramel Popcorn

  • Set your instant pot to sauté and add the coconut oil to the pot. While the coconut oil is melting, place two kernels into the pot. When the kernels pop, add the remaining kernels to the pot and give them a quick stir to get coated. Then place the lid on the pot and allow the remaining kernels to pop.
    When the popping has stopped, turn off the instant pot and remove the popcorn, salting as desired.

  • In a saucepan on medium heat, combine the sugar and the water. Do not stir. Simply allow sugar to melt. When the sugar has turned golden brown, you can add the butter to the skillet to melt. Once it has melted you can stir the ingredients and then slowly add the milk. Cook this for five minutes and then remove the skillet from the heat.
    Allow this to cool until it has thickened. butter to melt. Once butter melts, stir and add the milk slowly. Cook for 5 minutes then remove from heat. Let caramel cool until it thickens.

  • Once your caramel has thickened, you can pour half of it over the popcorn and toss the popcorn in it. When all of the popped kernels are coated transfer the bowl to the refrigerator to set (takes about an hour to set).
    Remove the set popcorn from the refrigerator and repeat the last step using the remaining caramel sauce. Return the popcorn to the refrigerator until ready to serve.
