Instructions
Place your molds on a rimmed baking sheet or similar surface that can be used to help you easily transport the pops to your freezer for freezing. In a mixing bowl, use a whisk to mix together the cocoa powder, sugar and cornstarch. Make sure that you break up all of the clumps. Whisk in the milk, one cup at a time. Once mixed, you can transfer the mixture to a saucepan.
Heat the mixture over medium heat until thickened and stir with a heat proof spatula paying careful attention to the sides and bottom so the mixture does not burn. Once it looks like a chocolate sauce (this will happen quickly). Remove the mixture from the heat and stir in the vanilla extract. Allow the mixture to sit for five to seven minutes to cool. This mixture will thicken as it cools. Then transfer this to the molds.
Freeze the pops until frozen. Then unmold them and enjoy. If you wrap these in plastic wrap or freezer baggies, they should keep for a few weeks.
