Tasty St Patricks Day Cupcakes

  • Place the cake mix with the pudding mix in a mixing bowl. Use whisk to blender them together. Add the sour cream, oil, eggs and milk. Mix until just combined and then gently stir in as much green food dye to get to your desired color.
    Bake the cupcakes according to the directions on the packaging. Then allow them to fully cool.
  • Start by melting the green candy melts in a microwave safe bowl, stopping every 30 seconds to stir. Place the melted green chocolate into a shallow bowl.
    Use a fork, skewer, or strawberry dipper to dip the first strawberry into the chocolate. However, keep the strawberry over the melted chocolate as you use a spoon to scoop melted chocolate over the strawberry as needed. Allow the excess chocolate to drip back into the bowl (you may need to gently give the strawberries a tap).

  • Melt the white chocolate melts like you did with the green melts. Pour the white chocolate on top of the green, (the more white lines you add, the more marbled it will be.
    Allow strawberries to set on parchment paper until set (about fifteen minutes).
  • Top each cupcake with the frosting. Then place a strawberry on top of each cupcake, Feel free to add sprinkles etc.
