Servings: 12

Ingredients

  • 1 ½ cup Pineapple
  • 1 cup Tomato
  • ¼ cup Green Pepper
  • ¼ cup Yellow Pepper
  • ¼ cup Orange Pepper
  • ¼ cup Red Onion
  • cup Cilantro
  • ¼ cup Lime Juice
  • 1 tbsp Jalapeno

Instructions

  • Make the pineapple bowl as directed. Lay the pineapple on its side and carefully cut it in half using a large knife. Alternatively you can cut about ⅓ of the pineapple off, leaving the entire stem attached and you will have one large bowl.
  • Dice up the scooped out pineapple meat into bite sized pieces. Then place the pieces in a large bowl.
  • Next, dice up the tomato, peppers, onion, and cilantro and add it the bowl with the pineapple.
  • Pour the lime juice over the ingredients and toss. Then add seasonings as desired and toss as needed.
  • Cover the bowl and refrigerate for at least a half hour.
  • Transfer the salsa to the scooped out pineapple or to a serving bowl. Serve with chips on the side or with poultry or fish.
