Cider Donut Icing- see post for details and recipe
Instructions
Start by reducing the apple cider. To do so, in a small saucepan, boil the apple cider until it has been reduced to a half cup. Then set the cider aside to cool.
In a medium sized bowl, use a fork or a whisk to combine the flour, baking powder, cinnamon, and brown sugar.Beat together the brown sugar, Greek yogurt, and butter until blended. Then add the dry ingredients from the first bowl and the egg and vanilla extract. Mix until just blended- do not overmix.
Give your donut maker a quick spray of nonstick and plug it in to heat up. When it is ready, use a tablespoon to spoon the batter into the donut spaces. Then set the timer to one minutes. After the one minute timer ends, flip the donuts (using a cake tester or long toothpick works however, the donuts will be very hot . Set the timer for two minutes and continue to bake until done.
Transfer the finished donuts to a wire rack for cooling. You will most likely make four batches. Meanwhile, have the glaze nearby in a shallow bowl. Dip the donuts into the glaze and return to the rack to dry. If you are glazing and topping the entire donut, you can do one side at a time allowing the sides to dry. While drying, you can add additional sugar or other toppings before serving.
