Add the oil to the instant pot and set the pot to saute. When the pot is ready, add the chicken along with the seasonings. Cook the chicken until it is no longer pink, stirring as needed ( about three to four minutes).
Once the chicken has fully cooked you can add the vegetables to the pot and saute for another five minutes.
Next, stir in the chicken broth along with the soy sauce. Then add the ramen noodles to the pot, making sure that the noodles are covered with the liquid. Seal the lid and the pressure valve and then cool on high pressure for eight minutes.
After the ingredients have cooked for eight minutes, quick release the pressure and remove the lid. Then break up the noodles using a large fork or tongs, and toss the ingredients together before serving.
