Ingredients

  • 4 Chicken Breasts -cut into chunks
  • 1 Red Bell Pepper - sliced
  • 1 Yellow Bell Pepper - sliced
  • 1 Green Pepper - sliced
  • 1 Onion - sliced
  • 2 tbsp Lime Juice
  • ½ cup Heavy Whipping Cream
  • 2 tsp Fajita Seasoning
  • 2 cups Monterey Jack Cheese - shredded

Plus cilantro as desired for presentation.

    Instructions

    • Preheat your oven to 400. Prep a 9x13 baking dish well for nonstick.
    • Place the chicken in a large bowl with the seasoning and use your hands to toss the chicken in the seasoning. Then transfer the chicken to your prepared baking dish, evenly spreading it over the bottom of the dish.
    • Next, evenly top the chicken with the peppers, onions, heavy whipping cream and lime juice.
    • Lastly, cover the ingredients with your cheese.
    • Bake the casserole in the center of your oven for 25-30 minutes or until the chicken is no longer pink.
    • Garnish the casserole with the cilantro before serving.
