  • Preheat your oven to 350 and prep two baking sheets for nonstick.
  • In a medium bowl, use whisk to mix together the flour, cinnamon, and baking soda.
  • Next, in a mixing bowl, beat together the butter and the sugars until fluffy and creamy.
    Mix in the egg, molasses, and vanilla until combined.
    Then mix in the dry ingredients from the first bowl until just combined.
  • Lastly, fold in the oatmeal.
  • Use a cookie scoop to drop the cookies on to the prepared baking sheets about an inch and half apart from one another.
    Then bake for 10-12 minutes or until the edges begin to brown.
  • Let the cookies sit on the baking sheets for a few minutes to finish setting before transferring them to a cooling rack.
  • While the cookies are cooling, you can make the center filling.
    Simply combine the ingredients until creamy. You may need to make ingredient adjustments as needed for consistency.
  • Then use a piping bag or zip top bag with cut corner to apply the filling to the inside (flat side) of half of the cookies to about ½" of the edges.
    Lastly, top the filling with the remaining cookies to make your sandwich.
