Lay out a stack of paper towels on a flat surface to be used to allow the cooked meat to sit on. Preheat a skillet on medium heat for one minute then add the oil.Sauté the onion until translucent (about three to five minutes). Then add the meat. Cook the meat until brown, breaking up chunks and stirring as needed. Once the meat has browned you can transfer it to the paper towels that you set out to cool and drain. Return the meat to the skillet and cook according to the direction on the seasoning package.
Preheat the oven to 400. Prep a rimmed baking sheet for nonstick. I like parchment paper. If you use foil I suggest that you give it a quick spray with nonstick.Evenly distribute the chips to the sheet pan to make a layer of chips. Then top this with the nacho cheese and then the shredded cheese. You may have leftover cheese depending on the size of your sheet pan. Once all of the cheese has been evenly distributed, bake the nachos until the cheese has melted (about seven minutes).Top the nachos with the cooked meat and then the remaining ingredients. Serve.
