Chocolate Coated Espresso Oreo Truffles

Ingredients

Optional- melted coconut oil or vegetable oil (1-2 teaspoons) as needed for melted chocolate texture and/or additional crushed cookies for decoration.

    Instructions

    • Line a rimmed baking sheet that with wax paper or parchment paper.
    • Place the cookies into a food processor and blend until the cookies are crushed into crumbs.
      Then place your crushed cookies in a mixing bowl.
    • When the cookies have all been crushed, you can stir in the (dry, not made) instant espresso. Then you can add the softened cream cheese and mix until well blended.
    • When you are able to form balls, use a cookie scoop to scoop out the ingredients, further rolling them into balls using your hands as needed. Then place the rolled balls on to the prepared baking sheet.
      The truffle balls should be about one to 1 ½ in in diameter.
    • Melt the candy candy wafers as indicated on the packaging. I like to place mine in a microwave safe bowl and microwave, stopping every 30 seconds to stir, until creamy. Do not overheat or overcook the coating. You can stir in the optional oil or coconut oil instead to help the texture.
      Use a spoon, skewer or fork to dip each of the truffle balls into the melted chocolate. Then place the covered truffles on to your prepped baking sheets.
    • Sprinkle any optional crushed cookies on top of the truffles and refrigerate until set (about an hour).
