Ingredients

  • 3 cups Pasta. --Cooked al dente.
  • 3 tbsp Taco Seasoning. --one ounce
  • 2 cups Cherry Tomatoes. --Use firm tomatoes that are sliced in half.
  • 4 Green Onions. --Chopped.
  • 2 cups Shredded Cheddar Cheese -- or Monterey Jack Cheese or a combination
  • 1 cup Catalina Dressing.
  • cups Tortilla Chips -- crushed

Optional Protein Ground beef (1 lb), ground turkey, ground chicken, or a vegan alternative. Cooked through (browned). Tortilla Chips Serve with crushed tortilla chips, such as Doritos, sprinkled on top for a bit of crunch and added flavor.

Instructions

  • Combine. In a large mixing bowl, use two large spoons or similar items to toss together the pasta and taco seasoning until combined. Then add the sliced tomatoes and chopped green onions and toss.
  • Protein. If you are adding a cooked protein, make sure that it has fully cooled before adding it to the bowl. Add the shredded cheese along with any protein to the bowl and toss the ingredients until combined.
  • Dressing. Pour a half cup of the dressing over the ingredients in the bowl and toss. Then repeat this step with the remaining dressing.
  • Serve. Cover and refrigerate the pasta for at least 10 minutes for the flavors to meld. Then serve the taco pasta with crushed tortilla chips on top.
