Preheat your oven to 425 and line a rimmed baking sheet with parchment paper or a baking mat.
Unroll the crescent dough into a long rectangle. Cut the dough into thirds lengthwise and then cut each portion into thin strips .
Wrap one piece of dough around each mini sausage and then pinch the seams to secure the dough.
Place each of the wrapped sausages on to your prepared baking sheet. Brush each wrapped sausage with your egg wash and then top them with a pinch of everything bagel seasoning.
Bake for 13-15 minutes, or until the pigs-in-a-blanket are golden brown. Let the sausages cool to room temperature before serving.
