Easy Chicken Enchilada Lasagna

Easy Chicken Enchilada Lasagna is a cheesy, layered Tex-Mex casserole made with shredded chicken, enchilada sauce, tortillas, and creamy seasoned filling. Perfect for busy weeknights, potlucks, or family dinners.

Ingredients

  • 10 oz Red Enchilada Sauce
  • 10 oz Green Enchilada Sauce
  • 10 oz Cream of Chicken Soup.
  • 1 cup Sour Cream
  • 4 oz Diced Green Chiles
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • ½ tsp Salt
  • ½ tsp Pepper
  • 3 cups Chicken . --Cooked and shredded.
  • 2 cups Mexican-Blend Cheese - Shredded. Divided.
  • 12 Tortillas. --For a softer texture use flour tortillas. To get a more authentic enchilada flavor, you can use corn tortillas.

Optional Toppings. Such as guacamole, chopped cilantro and diced tomatoes.

Instructions

  • Prepare. Preheat your oven to 375°F. Prep your baking dish for nonstick.
  • Combine In a large bowl, use a whisk to combine together the enchilada sauces, cream of chicken soup, sour cream, green chiles and seasonings.
  • Chicken. In another bowl, combine together the shredded chicken with one cup of the shredded cheese.
  • Layer. Start by spreading about half of the sauce from the second step over the bottom of the baking dish. Top the sauce with a layer of tortillas so that all of the sauce is covered by tortillas. Note that you may need to cut some of the tortillas to get all of the sauce covered. Cover the tortillas with a layer of about half of the chicken and cheese mixture. Top the chicken and cheese with another layer or tortillas, then another layer of the chicken and cheese, followed by another layer of sauce. Sprinkle the remaining cheese on top of the sauce.
  • Bake. Loosely cover the lasagna with foil and then bake for 20 minutes. Carefully remove the foil and continue to bake until the cheese is bubbly and golden (about 10-15 more minutes).
  • Set. Allow the lasagna to set for five to 10 minutes before serving.
