Ingredients

Salad

  • 2 lbs Small Red Potatoes
  • ½ cup Dill Pickles --Sliced thin.
  • ½ cup Radishes --Tops and ends removed and sliced thin.
  • ½ cup Celery. --Rinsed base and top removed, and then chopped into ¼"pieces.

Vinaigrette

Instructions

  • Potatoes. Place the potatoes into a large pot and cover the potatoes with cold water (about an inch or two above the potatoes). You can add a pinch of salt if desired. Bring the water to a boil on high heat. When the water begins to boil you can bump the heat down to medium. It should take about 15 minutes for the potatoes to become fork tender. Drain the potatoes and allow them to cool slightly before slicing them into ½” thick rounds or semi-circles (depending on the size of your potatoes).
  • Other ingredients. If you have not done so, you can thinly slice the pickles, radishes, and celery while your potatoes cool. Then place the ingredients and the cooled potato pieces into a large bowl.
  • Dressing. In a small bowl, use a whisk to combine together the olive oil (4tbs), vinegar, mustard, sugar, salt, pepper, and parsley.
  • Sauté To sauté onion, heat the remaining olive oil to a large skillet on medium-high heat for one minute. Then sauté the onion in the olive oil until it begins to turn golden brown. Remove the skillet from the heat and whisk in the dressing ingredients from the small bowl.
  • Combine Pour half of the warm sautéd ingredients over the ingredients that you placed into the large bowl. Toss the ingredients and the repeat the process with the remaining warm ingredients.
