Prep. Start by preheating your oven to 350 and prepping your muffin pan well for nonstick.
Mix. Place your ingredients, (except for the crumbled sausage) into a large bowl and then mix everything until just combined. A few small lumps are find as they will most likely bake out from your batter.
Fill. Transfer your pancake batter to your muffin pan, filling each cup three fourths full. Then add a tablespoon of your sausage crumbles to each of your muffin cups.
Bake. Bake your muffins in the center of your oven for 12-15 minutes or until a toothpick comes out clean from the center of a muffin.
Serve. Lastly, you can let your muffins cool for a few minutes before your serve them as they will need to set and will be warm from the oven.
