How to make Butterbeer Ice Cream

Ingredients

  • 2 cups Heavy Whipping Cream
  • 14 oz Sweetened Condensed Milk
  • 1 tsp Vanilla Extract
  • ½ cup Butterscotch Syrup -divided, homemade or prepared.
  • ¼ cup Butterscotch Chips
  • ¼ cup Mini Chocolate Chips. 

Instructions

  • In mixing bowl, with a mixer outfitted with a whisk attachment, whisk the heavy cream until soft peaks just begin to form.
    Do not over-whisk to the point of firm peaks.
  • .Meanwhile, in a smaller bowl, mix the sweetened condensed milk, vanilla extract and ¼ cup butterscotch syrup together until combined.
    Next, gently fold in half of the butterscotch mixture from the second bowl into the whipped cream from the mixing bowl.
  • Pour half of the mixture from the last step into the prepared loaf pan.
    Place the chips (both butterscotch and the chocolate chips) over the mixture in the pan.
    Now drizzle half of the butterscotch syrup over the chips.
    Repeat this process with the remaining. (add the remaining cream mixture then top with the chips and then syrup).
  • Transfer the ingredients to a loaf pan and cover with plastic or similar wrap. The place the loaf pan into the freezer for at least six hours, preferably overnight.
