Preheat your oven to 350 and prepare your baking sheets for nonstick.
In a medium bowl, use a whisk to combine together the baking soda, flour, and salt.
Next, in a mixing bowl, beat together the butter and both sugars until creamy. Then stir in the eggs and vanilla extract.
Add the butterfly pea powder to the mixing bowl and mix until blended through. Then add the dry ingredients from the first bowl and mix until just combined.
Use a rubber spatula to gently fold in the chocolate chips and half of the cookie chunks.
To form the cookies, use a cookie scoop to scoop out the dough. Then roll the dough between your hands to form a ball. Place the cookies about an inch and a half apart on your baking sheet.
Bake the cookies for eight to ten minutes or until the edges appear set. Let the cookies sit on the baking sheet for five minutes before transferring to a cooling rack to fully cool. While the cookies are cooling on the baking sheet, carefully and gently add the eyes and remaining cookie chunks needed to make the mouth. Then place the edible eyes in place while still warm
