- Flour. All purpose flour was used to make my cookies.
- Baking Soda. Added as a leavener.
- Salt. Omit this if you are using salted butter.
- Butterfly Pea Powder This is what makes the cookies blue.
- Brown Sugar and Granulated Sugar. Both sugars are used for sweetening.
- Eggs. Your eggs should be at room temperature for best results.
- Vanilla Extract. Added for flavor balance.
- Chocolate Chips. Milk or semisweet chocolate chips work best. You can also swap in some white chocolate chips for a portion of the chocolate chips.
- Sandwich Cookies (such as Oreos) and Chocolate Chip Cookies (such as Chips Ahoy) are used chopped into chunks and used as decoration.
- Edible Eyes. So our monster can see. 😉

Bake Time: 8-10 minutes .

- Preheat your oven to 350 and prepare your baking sheets for nonstick. I like parchment paper or a baking mat for a recipe such as this one.
- In a medium bowl, use a whisk to combine together the baking soda, flour, and salt.
- Next, in a mixing bowl, beat together the butter and both sugars until creamy. Then stir in the eggs and vanilla extract.
- Add the butterfly pea powder to the mixing bowl and mix until blended through. Then add the dry ingredients from the first bowl and mix until just combined.
- Next, use a rubber spatula to carefully fold in half of the chopped cookies and the chocolate chips.
- Use a cookie scoop (medium was used for my cookies) to scoop out the dough. Then roll the dough between your hands to form a ball. Place the cookies about an inch and a half apart on the baking sheet.
- Bake the cookies for eight to ten minutes or until the edges appear set.
- Let the cookies sit on the baking sheet for five minutes before transferring to a cooling rack to fully cool. While the cookies are cooling on the baking sheet, carefully and gently add the eyes and cookie chunks needed to make the mouth. Then place the edible eyes in place while still warm.
Expert Tip👉 If your dough is too soft to work with, try refrigerating it for 10-15 minutes before rolling it into balls.
