Fudgy Brownie Cake Pops

Fudgy Brownie Cake Pops are the ultimate treat. Easy recipe for truffle-like bites combine rich chocolate brownies with a snappy candy shell.

Ingredients

  • 16 Brownies. -- Either already baked and cooled or premade brownies
  • ΒΌ cup Chocolate Frosting.
  • 12 oz Chocolate Candy Melts

Lollipop Sticks To hold the cake pops. Optional. Toppings such as chopped nuts, shredded coconut, and candy sprinkles.

Instructions

  • Bake. Bake the brownies as indicated on the packaging and then allow the brownies to fully cool. If your brownies have already been baked and cooled, you can skip this step.
  • Prepare. Line a rimmed baking sheet that can fit into your freeze with parchment or wax paper.
  • Combine. Use your hands to break up the cooled brownies into small crumb-sized pieces. You can wear food grade gloves to do this. Place the brownie crumbs into a large bowl and then add the frosting, dropping dollops over the brownie crumbs. Use your hands or a rubber spatula to combine the ingredients until they are able to hold together.
  • Scoop. Use a small cookie scoop to scoop out the ingredients and then roll the ingredients into a ball. When done, stick a lollipop stick into the center of each of the balls and then place the baking sheet in your freezer for 15 minutes to help the ingredients set.
  • Melt. While the pops are setting, in a microwave-safe bowl, heat your chocolate melts, stopping to stir every 30 seconds, until smooth. You can add a teaspoon or two of shortening if needed to smooth the chocolate out.
  • Coat. Carefully dip each of the pops into the melted chocolate. You can use a spoon to help coat the pops with the melted chocolate if needed. Then place the pops back on to the baking sheet.
  • Topping. While the chocolate is still wet, you can add sprinkles or toppings as desired to your cake pops.
  • Set. Allow the chocolate coating to fully set and harden before serving.
