Preheat your oven to 350. Prep your baking sheet(s) for nonstick.
In a medium mixing bowl, use a whisk to combine together the flour, dry pudding mix, baking soda, and salt.
Next, in a mixing bowl, cream together the softened butter and sugars until creamy. Then stir in the vanilla extract.
Add the eggs (including the yolk) to the mixing bowl and mix until combined. Then add the dry ingredients from the first bowl to the mixing bowl and mix until just combined.
Lastly, fold in the white chocolate chips followed by the sprinkles.
Use a cookie scoop to scoop up the cookie batter. Drop the rounded cookie dough on to your prepared baking sheets.
Bake for 10-12 minutes or until the cookies start to turn golden brown. Let the cookies sit on the baking sheet for a couple of minutes before transferring them to a cooling rack to finish cooling.
