Line a rimmed baking sheet with wax or parchment paper. The rimmed baking sheet will be your work space. Also, gather your ingredients.
In a food processor, or really good blender, process the cookies (intact) until the cookies turn into crumbs.
Add the cream cheese chunks to the food processor and process until the ingredients form a ball.
Use a runner spatula to scrape down the sides of the food processor as needed
. Using a small cookie scoop, scoop out the dough and then use your hands to roll the dough into a smooth ball. Place the complete truffle on to the prepared baking sheet and repeat the process until all of the truffles have been made. Refrigerate the truffles for an hour to set. Melt the chocolate chips according to the packaging directions. You can stir in a teaspoon or two of coconut oil if needed to smooth it out.
When the chocolate has a creamy consistency, use a fork to dip the Oreo balls into the melted chocolate and in the other hand, use a spoon to help cover the truffle ball. Dip each truffle ball into the melted chocolate and then tap it to remove the excess chocolate. Place the cookie ball on the prepared cookie sheet, leaving space between each truffle, and immediately decorate with sprinkles.
Lastly, Oreo truffle balls in the refrigerator to set before serving (about an hour).
