In a medium sized mixing bowl, combine together the brown sugar, ground cinnamon, and melted butter until completely blended. It will be sandy in appearance when blended. Then place about a quarter of this mixture over the bottom of your slow cooker.
Place an even layer of sliced bread over the sandy mixture on the bottom of the slow cooker making sure that you cover any open gaps in the bread as needed with bread.
Next, cover the layer of bread with a quarter of the butter and brown sugar mixture over the bread. Top the brown sugar and butter layer with a quarter of the frozen blueberries. Repeat the layers twice in the same steps , finishing with a layer of blueberries.
In a large mixing bowl use a whisk to combine together the eggs, milk, vanilla, and optional salt, beating the ingredients until well blended. Then pour this egg mixture evenly and slowly over the bread, allowing the mixture to soak into the bread.
Cover the layered ingredients are refrigerate for a minimum of one hour to, preferably, overnight.
When you are ready to slow cook your French toast, take the crock/slow cooker out of the refrigerator. Cook the French toast until the bread has turn golden brown and the eggs have cooked fully (2 ½-3 hours on high or 4 to 4 ½ hours on low depending on your pot).
Then allow the slow cooker to rest for 15 minutes prior to serving.
