    This is a simple recipe for how to make air fryer muffins.
    The muffins are made with pumpkin puree and fall inspired flavors.

    You will need to use an air fryer to make this recipe.

    Ingredients need to make air fryer pumpkin muffins.

    • All Purpose Flour- 2 cups
    • Baking Powder- 1 teaspoon.
    • Cinnamon- 2 teaspoons. divided.
    • Sugar- 1 cup, divided.
    • Vegetable Oil- ½ cup.
    • Eggs- 2.
    • Milk- ½ cup.
    • Pumpkin Puree- ½ cup.
    • Butter- ½ cup melted.

    How to make Air Fried Pumpkin Muffins.

    Step 1. Make the batter. In a medium mixing bowl, use a fork or whisk to mix together the flour and baking powder. Next, in a mixing bowl, beat together ½ cup of sugar, 1 teaspoon of cinnamon, and the vegetable oil until blended. Add the eggs and milk to the mixing bowl and mix until blended. Lastly, add the dry ingredients from the first bowl to the mixing bowl and mix until just blended, do not over mix. Fold in the pumpkin pureed by hand.

    Step 2. Air fry. Use a tablespoon or scoop to transfer the batter to the molds, filling them ¾ full. Air fry at 300 for 12 minutes then carefully remove the muffins from the air fryer.

    Step 3. Top the muffins and serve. In a shallow bowl, mix together the melted butter with the remaining sugar and cinnamon. Then dip each of the muffins into the mixture , covering the tops of each muffin before serving.
