Frequently asked questions about sandwich cookies.
Sandwich cookies are two cookies with some kind of a filling between them.
A good sandwich cookie has a good balance of flavors and textures with the layers and filling.
The outer cookie layers should be consistently soft and chewy (like oatmeal cookies) or crisp (like Oreo cookies) with both of the cookies being uniform in size and shape. A filling layer should be soft, smooth and creamy with a flavor that balances the outer layer.
A good sandwich cookie is made with fresh ingredients.
The outer cookie layers should look and taste the same while the filling should complement the cookies rather than overtake the flavors.
When assembling the cookie, the filling should be spread just short of the edges of the bottom cookie so that the filling stays intact when the top cookie is in place.

How to make Easy Oatmeal Cream Pies
Step One: make the cookies.
- Preheat your oven to 350 and prep two baking sheets for nonstick. I like to use parchment paper for a recipe such as this one.
- In a medium bowl, use whisk to mix together the flour, cinnamon, and baking soda.
- Next, in a mixing bowl, beat together the butter and the sugars until fluffy and creamy.
- Mix in the egg, molasses, and vanilla until combined. Then mix in the dry ingredients from the first bowl until just combined.
- Lastly, fold in the oatmeal.
Step Two: bake the cookies.
Use a cookie scoop to drop the cookies on to the prepared baking sheets about an inch and half apart from one another. Then bake for 10-12 minutes or until the edges begin to brown. Let the cookies sit on the baking sheets for a few minutes to finish setting before transferring them to a cooling rack.
Expert Tip 👉 The cookies are done baking when the edges begin to brown and appear set. The centers should still be a bit soft and that is okay for this recipe. Soft oatmeal cookies are the goal with this recipe.
Step Three: make the center filling and assemble the cookies.
While the cookies are cooling, you can make the center filling. Simply combine the ingredients until creamy. You may need to make ingredient adjustments as needed for consistency.
Then use a piping bag or zip top bag with cut corner to apply the filling to the inside (flat side) of half of the cookies to about ½" of the edges. Lastly, top the filling with the remaining cookies to make your sandwich.
