    Ingredients needed to make oatmeal sandwich cookies.

    • Flour. Use all purpose flour that is also leveled.
    • Ground Cinnamon. Gives the cookies a nice balance of flavors.
    • Baking Soda. Used as a leavener.
    • Butter. You butter should be softened to room temperature.
    • Brown Sugar. Light or dark brown sugar really work in this recipe. Your brown sugar should also be packed.
    • Granulated Sugar.
    • Egg. Use a large egg that is also at room temperature.
    • Molasses. This gives the cookies flavor and texture.
    • Vanilla. Offers balance to the flavor of these cookies.
    • Oats. Rolled oats should be used.

    For the filling.

    • Powdered Sugar. Granulated or other sugar should not be substituted.
    • Butter. Softened butter is essential to the center filling.
    • Heavy Whipping Cream. This gives the filling a good structure. Using milk or another sub will not offer the same structure.
    • Vanilla Extract. Feel free to use another extract such as maple extract.

    How to make Easy Oatmeal Cream Pies

    Step One: make the cookies.

    1. Preheat your oven to 350 and prep two baking sheets for nonstick. I like to use parchment paper for a recipe such as this one.
    2. In a medium bowl, use whisk to mix together the flour, cinnamon, and baking soda.
    3. Next, in a mixing bowl, beat together the butter and the sugars until fluffy and creamy.
    4. Mix in the egg, molasses, and vanilla until combined. Then mix in the dry ingredients from the first bowl until just combined.
    5. Lastly, fold in the oatmeal.

    Step Two: bake the cookies.

    Use a cookie scoop to drop the cookies on to the prepared baking sheets about an inch and half apart from one another. Then bake for 10-12 minutes or until the edges begin to brown. Let the cookies sit on the baking sheets for a few minutes to finish setting before transferring them to a cooling rack.

    Expert Tip 👉 The cookies are done baking when the edges begin to brown and appear set. The centers should still be a bit soft and that is okay for this recipe. Soft oatmeal cookies are the goal with this recipe.

    Step Three: make the center filling and assemble the cookies.

    While the cookies are cooling, you can make the center filling. Simply combine the ingredients until creamy. You may need to make ingredient adjustments as needed for consistency.

    Then use a piping bag or zip top bag with cut corner to apply the filling to the inside (flat side) of half of the cookies to about ½" of the edges. Lastly, top the filling with the remaining cookies to make your sandwich.
