To make the green cupcakes we will use a basic cupcake recipe.
Then we will add some coloring to the cupcakes.
The cupcakes are basic cupcakes.
However, the topping is what really makes these cupcakes so great.
There is a strawberry on top that is coated in green and white swirl chocolate.
You may be asking what does adding pudding mix to cake mix do.
I am adding pistachio pudding to this recipe.
The pistachio pudding mix adds a bit of color along with that yummy flavor.
Adding pudding mix does more than just add flavor and color.
The pudding will both add to the moisture and to the texture of these cupcakes.
As a result, the cupcakes will be be both moist and flavorful.

I am using a cake mix base for these cupcakes for ease.
Feel free to use your own from scratch recipe.

- When selecting a cake mix, select one that is not overly flavorful such as a yellow cake mix. The pistachio pudding will add plenty of flavor.
- Or, you can simply use store bought cupcakes.
- Resist using really big strawberries for the topping as you may have difficulty making them stay in place. Average sized strawberries work best.
- Also, the strawberries should be clean and dry before covering them with chocolate.

About this recipe for St. Patty's Day Cupcakes.
This is a two part recipe for cupcakes.
The first part of this recipe is for making cupcakes.
To make the cupcakes we will use a cake mix with pudding and optional food dye.
The second part of this recipe is for the topping.
Frosting the cupcakes is optional.
The strawberries that are placed on top are coated in chocolate.
Ingredients needed to make the cupcakes.
- Cake Mix- 1 box. I like yellow or white cake mix for this recipe.
- Instant Pudding Mix- 1 3.4 ounce box, pistachio.
- Sour Cream- 1 cup.
- Vegetable Oil- 1 cup.
- Eggs- 4.
- Milk- ½ cup.
- Green Food Dye- 3-4 drops or as needed for color.
- Frosting- 1 container or batch of homemade.
- Strawberries- 15. Use small strawberries that have been rinsed and dried.
- Green Candy Melts.
- White Candy Melts.
How to make these Cupcakes.
Step One: make the cupcakes.
Place the cake mix with the pudding mix in a mixing bowl. Use whisk to blender them together.
Add the sour cream, oil, eggs and milk. Mix until just combined and then gently stir in as much green food dye to get to your desired color.
Bake the cupcakes according to the directions on the packaging. Then allow them to fully cool.
Note: this will make about 15 average sized cupcakes.
Step Two: Make the strawberries.
Start by melting the green candy melts in a microwave safe bowl, stopping every 30 seconds to stir.
Place the melted green chocolate into a shallow bowl.
Use a fork, skewer, or strawberry dipper to dip the first strawberry into the chocolate. However, keep the strawberry over the melted chocolate as you use a spoon to scoop melted chocolate over the strawberry as needed. Allow the excess chocolate to drip back into the bowl (you may need to gently give the strawberries a tap). Place the chocolate covered strawberry on a parchment paper lined dish or baking sheet and repeat with the remaining strawberries. Once the strawberries are dry and the chocolate has hardened repeat this process a second time if needed.
Step Three: add the white chocolate to the strawberries.
Melt the white chocolate melts like you did with the green melts.
Pour the white chocolate on top of the green, (the more white lines you add, the more marbled it will be.
Allow strawberries to set on parchment paper until set (about fifteen minutes).
Step four: assemble the cupcakes.
Top each cupcake with the frosting.
Then place a strawberry on top of each cupcake,
Feel free to add sprinkles etc.
