This pineapple in this recipe gives it a tangy and sweet flavor. The peppers add crunch. Tomato adds a bit of acid to balance the sweetness. Lastly, it is the cilantro and the jalapeño pepper that makes this a true salsa that most everyone expects.
I would store leftover pineapple salsa in a covered bowl refrigerated. The pineapple bowl itself should not be used for storing the ingredients in as it will not last as long. The pineapple bowl is purely for presentation.
As far as freezing goes, this is one of those recipes that contains certain elements that will not freeze as well as others. That is, while the pineapple chunks may do okay frozen, the peppers and tomato may not. It is best to make and eat this dish fresh.

- Refrigerating the prepared salsa for about a half hour helps the flavors interact with one another. You can refrigerate the salsa covered in a bowl and then transfer it to your carved out pineapple to serve.
- The pineapple salsa alone can be stored in an airtight container in the fridge for up to five days. However, the pineapple bowl itself will begin to lose freshness overnight.

You can serve this salsa in the carved out pineapple for an added presentation.
If you choose to serve this in a pineapple, make the recipe in a bowl and transfer it into the pineapple just before serving. This is because the pineapple may not be sturdy enough to hold the ingredients for a long time and the pineapple will not last as long.
Ingredients needed to make pineapple salsa.
- Pineapple. The pineapple itself can be used as a bowl. You will need to carefully scoop out the inside of the pineapple to dice it up. You will most likely not need all of the pineapple meat for this recipe.
- Peppers. There are a variety of peppers that add color (green, yellow, and orange) and flavor to this recipe. Feel free to use your favorite pepper or omit peppers as desired. The jalapeno is the pepper that most people expect in a salsa. You will need one cup total of diced pepper in addition to the jalapeno.
- Tomato. Roma tomato is the preferred choice as it is a sturdy tomato that has a great tasting flavor.
- Onion. Red onion is a good choice for this recipe because of its flavor and intensity.
- Cilantro and seasonings as desired. Cilantro gives any salsa that unique flavor.
How to make Pineapple Salsa.
Servings: 10-12 people | Prep time: 20 minutes
Step One: prepare the pineapple bowl.
Using the pineapple to make a serving bowl is optional however, it does make for an impressive presentation. Please note that this will make two bowls, one from each half of the pineapple.
- Lay the pineapple on its side and carefully cut it in half using a large knife. Alternatively you can cut about ⅓ of the pineapple off, leaving the entire stem attached and you will have one large bowl.
- Using a smaller knife, make a cut around the outer edge of the pineapple and then make cuts across the middle and from top to bottom.
- Use a metal spoon to scoop out the pineapple chunks. Minus the core, which will be the harder section to cut in the center of the pineapple.
- You can wrap the the pineapple bowl and refrigerate it until needed.
Step Two: Dice the ingredients.
- Dice up the scooped out pineapple meat into bite sized pieces. Then place the pieces in a large bowl.
- Next, dice up the tomato, peppers, onion, and cilantro and add it the bowl with the pineapple.
- Pour the lime juice over the ingredients and toss. Then add seasonings as desired and toss as needed.
- Cover the bowl and refrigerate for at least a half hour.
-
Step Three: serve the salsa.
Transfer the salsa to the scooped out pineapple or to a serving bowl. Serve with chips on the side or with poultry or fish.
EXPERT TIP👉 Make this recipe even easier to make. Use pre-cut pineapple chunks (freezer section) along with a can of diced tomatoes that already have cilantro and other ingredients in it.
