Ingredients needed to make marshmallow fluff.
- Egg whites. Because of the protein in (fresh!) egg whites, they are able to whip up easily into a meringue.
- Cream of Tartar. This is used to 'stabilize' the egg whites so that they whip up into smooth and stiff.
- Corn Syrup. This is used to add sweetness and structure to the fluff.
- Vanilla extract. For flavor but, you can easily use another extract for another flavor right?
- Water. Water is used to heat the sugar and syrup.

(Yields 5 cups) Prep time: 30 minutes
Step One: dissolve the sugar.
In a sturdy pot over low heat, heat the water, sugar and corn syrup, stirring constantly. Once the sugar has dissolved you can bump up the heat to medium. It is recommended that once you bump up the heat that you add a candy thermometer to the pot. Do not stir the mixture any more.
Heat the mixture to 240°f on a candy thermometer or until soft ball forms Then remove the ingredients from the heat.
Step Two: whip up the eggs whites to make a meringue.
Outfit your stand mixer with a whisk attachment. While the ingredients on the stove are simmering, you can place the egg whites and cream of tartar in a clean mixing bowl of your stand mixer. Beat the ingredients on medium high speed until until smooth peaks form (about four to five minutes).
Step Three: combine the ingredients and make your fluff.
Turn the mixer to medium high and carefully and slowly pour the ingredients from the pot into the mixing bowl. It is normal for the peaks to go down in size at this time.
Once the syrup has been fully added to mixing bowl, continue to mix the fluff until it is cool, firm, and glossy (this can take about seven to eight minutes). You can add the vanilla the mixing bowl after five minutes of mixing.
Store this in an airtight container for up to two weeks or freeze for later use..
