This is the cookie that is inspired by cathedral windows.
Some folks refer to these cookies as 'Church Cookies' because they are colorful like stained glass windows when they are sliced in half.

- Refrigerate the marshmallows for an hour before making this recipe. This will help prevent the marshmallows from melting when combined with the melted chocolate.
- While refrigerating these cookies is recommended, you could try freezing them if you are in a bind for time. However, if they are frozen for too long you may have issues slicing them.

Church Window cookies, aka. Cathedral cookies, are inspired by the stained glass windows that are in a house of worship.
This is a no-bake recipe that needs refrigeration to set.
To make this cookie you will first need to melt the chocolate.
Then the other ingredients are added and the mixture is formed into a log.'
After refrigeration, the log is sliced into the cookies.
Ingredients needed to make these cookies.
- Semi Sweet Chocolate Chips -1 cup.
- Butter- 2 tablespoons. Some people prefer margarine for the texture.
- Egg- 1 whisked.
- Pastel Colored Mini Marshmallows- 3 cups.
- Chopped Nuts- ½ cup, walnuts or pecans work best.
- Shredded Coconut- 1 cup.
How to make Easy Cathedral Window Cookies
Step One- melt the chocolate.
In a small bowl, whisk the egg.
On a double boiler on medium low heat, melt the chocolate with the melted butter. I suggest that you whisk the ingredients as they melt together.
Once melted, take a tablespoon of the melted chocolate and stir it into the whisked egg. Then transfer the whisked egg and chocolate back to the double boiler. Cook for one minute then remove from the heat. Allow this to cool for ten minutes gently stirring after five minutes.
Step Two: add the marshmallows.
Once the chocolate has somewhat cooled, transfer it to a mixing bowl. Then fold in the marshmallows and the nuts.
Refrigerate for a half hour.
Step Three: finish the cookies.
Line a log shaped pan with wax paper.
If you do not have a log shaped pan, simply use a rimmed baking sheet as you can easily shape your cookies into a log instead.
Sprinkle half of the coconut on to the wax paper that you prepared earlier.
Then transfer the cookie mixture to the wax paper lined pan or sheet. If you are using a baking sheet, simply form the mixture into a log. Sprinkle with the remaining coconut so the the log is evenly covered.
Seal the wax paper around the log (twisting the ends of the wax paper works well).
Refrigerate or freeze until firm. Then cut the log into ¾-1" wide slices and serve.
