    Easy Cathedral Window Cookies

This is the cookie that is inspired by cathedral windows.
Some folks refer to these cookies as 'Church Cookies' because they are colorful like stained glass windows when they are sliced in half.

Have you tried my Tri Color Christmas Cookies?

That cookie recipe is another colorful cookie idea.
Both this Cathedral Cookie and that Tri Color Cookie would look wonderful together on a dessert table such as a holiday dessert table!

To make this recipe you will need pastel colored mini marshmallows. You can find a good selection of pastel colored mini marshmallows here.

    What are church window cookies?

I mentioned that this cookie is named for the stained glass windows in a house of worship.
Because of the colorful marshmallows, we get all of those wonderful colors.

Church window cookies are held together with an egg and melted chocolate.

The melted chocolate acts like an outline surrounding the marshmallows.
Colorful marshmallow windows surrounded by the melted chocolate make this cookie what they are.

This cookie is a nice idea for a no bake Christmas cookie.

Cathedral cookies are refrigerated to set.
You will however, need to melt the chocolate for these cookies.

Yes, there is an egg in this recipe.
The egg will be tempered and cooked.
I will share this simple step in the instructions below.

Tips for making Church Window Cookies.

This recipe really works best when you use a double boiler method of melting the chocolate.
I say this because the tempered egg needs to be added to the melted chocolate.

    More tips for you.

    1. It is essential that these cookies have sufficient time to set in the refrigerator. You can easily make this cookie the night before sharing them in order to allow them enough time to set together.
    2. Refrigerate the marshmallows for an hour before making this recipe. This will help prevent the marshmallows from melting when combined with the melted chocolate.
    3. While refrigerating these cookies is recommended, you could try freezing them if you are in a bind for time. However, if they are frozen for too long you may have issues slicing them.

    Personalize stained glass window cookies.

This is a standard recipe for a classic no bake cookie.
However, you can change yours up a bit too.

    Try one of these ideas.

    • Instead of using chocolate chips, use white chocolate chips instead. You can add a few drops of food coloring to make them different colors too!
    • Drizzle melted chocolate on top or sprinkle powdered sugar.
    • Add chopped nuts sprinkles to your cookies.

How to make Easy Cathedral Window Cookies

    Step One- melt the chocolate.

In a small bowl, whisk the egg.

On a double boiler on medium low heat, melt the chocolate with the melted butter. I suggest that you whisk the ingredients as they melt together.
Once melted, take a tablespoon of the melted chocolate and stir it into the whisked egg. Then transfer the whisked egg and chocolate back to the double boiler. Cook for one minute then remove from the heat. Allow this to cool for ten minutes gently stirring after five minutes.

    Step Two: add the marshmallows.

Once the chocolate has somewhat cooled, transfer it to a mixing bowl. Then fold in the marshmallows and the nuts.
    Refrigerate for a half hour.

    Step Three: finish the cookies.

Line a log shaped pan with wax paper.
If you do not have a log shaped pan, simply use a rimmed baking sheet as you can easily shape your cookies into a log instead.

Sprinkle half of the coconut on to the wax paper that you prepared earlier.
Then transfer the cookie mixture to the wax paper lined pan or sheet. If you are using a baking sheet, simply form the mixture into a log. Sprinkle with the remaining coconut so the the log is evenly covered.
Seal the wax paper around the log (twisting the ends of the wax paper works well).

Refrigerate or freeze until firm. Then cut the log into ¾-1" wide slices and serve.
