    No Bake Pumpkin Cheesecake Truffles

    This is a tasty treat recipe idea that is made with pumpkin puree.

    The truffles are then coated with white chocolate to look like mummies (or ghosts?).

    This recipe for truffles is not as easy as that Mummy Oreo Cookie idea but, it is good just the same!

    This recipe calls for white chocolate chips which are melted and used to coat these truffles.

    This recipe is for anyone asking what are dessert truffles made of.

    By the way, 'truffle' is also the name of a mushroom (fungi).
    The fungi mushroom truffle and the dessert truffle, as in this recipe, have nothing in common other than their name.. truffle.

    Dessert truffle recipes may vary but, they do have something in common.

    These kinds of truffles are usually round. Often, such as in the case of this recipe, truffles are not baked and may be covered with melted chocolate.

    So what is the difference between a truffle and a chocolate?

    I know that I have ventured into a certain fancy candy store that has had chocolates for sale that were called truffles. Those truffles really were chocolate covered chocolate or caramel.

    For most of us, truffles are more like a kind of a chocolate.

    In this recipe, the truffles are made using a mixture, which included pumpkin puree, that is formed into a ball. That ball is then covered with melted chocolate.

    Tips for making a dessert truffle.

    This recipe calls for using pumpkin puree. Please make sure that you are using pumpkin puree and not pumpkin pie filling as these are two different things.

    Here are some more tips for you.

    1. Once you have rolled the mixture into balls, it is important that they are refrigerated in order to hold their shape. You can speed up the process by placing the truffle balls into the freezer.
    2. These truffles are covered with melted white chocolate. Feel free to use a few drops of food coloring to make these truffles into pumpkins or something else.
    3. This recipe calls for ginger snap cookie crumbs. Feel free to use the cookie crumbs of your choice instead.

    How to make this into a sugar free truffle recipe.

    This recipe can easily be made with less sugar.
    You will need to make a few ingredient substitutions.

    Here are substitution ideas for making this recipe with less sugar.

    • Use sugar free cookies rather than the ginger snap cookies and graham crackers.

    This recipe is made in three parts.
    The first part of this recipe is for making the inside of the truffles.

    For the next parts we will make the truffle balls.

    The second part is where we will form the truffles balls.
    Then we will cover them with the remaining white chocolate.

    Ingredients needed to make Pumpkin Cheesecake Truffles.

    • Ginger Snap Cookie Crumbs- 1 ½ cup.*
    • Pumpkin Puree- ¼ cup.
    • Graham Cracker Crumbs- ⅓ cup.*
    • Powdered Sugar- 3 tablespoons.
    • Cinnamon- ¼ teaspoon.
    • Cream Cheese- 3 ounces, softened to room temperature.
    • White Chocolate Chips- 1 cup, divided.
    • Red Food Coloring.

    *Note: To make the crumbs, simply place the cookies or crackers in a food processor and process until you get a good consistency. Alternatively, you can place them into a zip topped bag and use hammer or something else to crush them.

    How to make No Bake Pumpkin Cheesecake Truffles

    Step 1. Make the inside of the truffles. In a large bowl combine together the ginger snap cookie crumbs, pumpkin purée , graham cracker crumbs, powdered sugar, cinnamon, and cream cheese.  Blend until smooth ( a food processor may also work). Melt ½ cup of the white chocolate and stir it into the mix. Cover the mixture and place it into the refrigerator to chill until the dough is solid enough to roll into balls (about an hour).

    Step 2. Form the truffle balls. Roll the truffle mixture into 14-16 individual balls, place a toothpick into each one, and then place it onto a baking sheet that is lined with parchment paper. Next, melt the remaining white chocolate chips in a shallow microwave safe bowl.  Use the toothpicks to dip each truffle ball into the white chocolate, making sure to coat the entire truffle.  Then place the covered truffle back on to the lined baking sheet. When all of the truffle balls have been covered, place the baking sheet into the refrigerator so that the chocolate can harden (about five minutes).

    Step 3. Finish the truffles. Once the chocolate has hardened on the truffles, drizzle the remaining melted white chocolate over the truffles, moving back and forth quickly to create thin lines.  Use a Q-tip soaked in red food coloring to make the mummy eyes.  Tap the spot on the truffle where you would like the eye and then handle carefully to make sure you don’t wipe the eyes off.  Store chilled in an airtight container.
