    The term 'churn' is somewhat antiquated as it refers to the way dairy products, such as ice cream or butter, were processed. Today you would use an ice cream machine to do the 'churning' rather than a churn itself.

    This is an ice cream recipe that can be made without churning.

    Because this is a 'no churn' recipe, you do not need an ice cream maker or churn to make this thicken the ingredients. Instead, we are simply using a mixer to integrate the ingredients and a freezer to help the result to get hard enough to eat.

    Rocky road is really both a flavor and texture when ingredients are put together in a recipe but, without being combined. That is, while the ingredients are all together, then are left intact.

    Make this ice cream lower in sugar. Use a sweetened condensed milk alternative, sugar free chocolate chips, and sugar free marshmallows (you may need to cut these up for size).

    1. Rocky road ice cream works best when you use miniature marshmallows rather than large ones. You can however, use colorful marshmallows if you want to.
    2. Unsweetened powdered cocoa is used to make this ice cream chocolate. Make sure that you are using unsweetened powdered cocoa and not a powdered chocolate drink such as chocolate milk.
    3. This recipe works best when a metal loaf pan is used. This is because metal is able to conduct the cold evenly and quickly when the ice cream is placed into the freezer to set. Can you use glass or plastic? Yes....but, metal pans work best.

    This is a simple ice cream recipe that is based upon rocky road. It feature a chocolate base flavor with marshmallows and pecans added.

    To make this recipe you will need a freeze and a loaf pan.

    The ingredients will be combined together and then placed in the pan to freeze. The ice cream should be set in about six to eight hours.

    Ingredients needed to make rocky road ice cream.

    • Heavy Whipping Cream- 2 cups.
    • Sweetened Condensed Milk- 14 ounces (typical size of canned product).
    • Vanilla Extract- 1 teaspoon. Use real or pure as opposed to imitation extract for best results.
    • Salt- ½ teaspoon.
    • Unsweetened Cocoa Powder- ½ cup
    • Chopped Pecans- ½ cup.
    • Chocolate Chips- ¾ cup. Some folks prefer semi-sweet for ice cream however, milk chocolate chips are easier to eat when frozen, in my opinion.
    • Mini Marshmallows- 1 cup.

    How to make Rocky Road Ice Cream

    This recipe makes one quart of ice cream. It should take about 15 minutes to make this recipe and about six to eight hours to freeze.

    Step One: prepare.

    Make sure that you loaf pan is clean. Outfit your mixer with a whisk attachment if possible. You will need one additional mixing bowl.

    Step Two: mix ingredients.

    • In a mixing bowl, blend together the condensed milk, vanilla, salt, and cocoa powder.
    • In another mixing bowl, with a mixer outfitted with a whisk attachment, whisk the heavy cream until soft peaks just begin to form. Do not oven whisk to the point of firm peaks.
    • Use a rubber spatula to fold in the ingredients from the first bowl (condensed milk etc) into the heavy cream soft peaks. Then fold in the pecans, chocolate chips, and marshmallows.

    Step Three: freeze the mixture.

    Transfer the ingredients to your pan. Then cover the pan with plastic or similar wrap. Freeze the ice cream for at least six hours and preferably overnight.
