How to butterfly turkey breast.
The result of this step is to get one large piece of turkey breast that is half of its original thickness but, twice as wide.
Lay out your turkey breast on a clean cutting board and remove any excess skin etc.
Very carefully, using a knife and cutting horizontally (parallel with the cutting board )from the narrow end of the turkey breast, cut the turkey breast in half, stopping about an inch from the wide edge of the breast.
Then flatten the turkey breast to prepare it for adding the other ingredients before your roll it up.
Place a piece of plastic wrap over the opened chicken breast.
Use a meat mallet/tenderizer to flatten the chicken breast so that it is evenly level throughout.
Ingredients needed to make a stuffed turkey roll.
- Turkey breast- 2 pound breast (boneless and skinless).
- Olive oil -3 tablespoons or as needed.
- Onion- ½ cup chopped.
- Garlic- 1 clove chopped or minced.
- Spinach- 1 cup fresh leaves preferred.
- Bacon- 8-10 pieces or as needed for wrapping.
- Mozzarella Cheese -½ cup, grated. Feel free to sub in the cheese of your choice.
- Dry white wine- 1 cup.
- Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
How to make Spinach Stuffed Turkey Breast
Step One: preparation.
Butterfly and flatten the turkey breast as indicated above. Place the butterflied and flattened turkey breast on a flat surface such as a cutting board with the skin side down. Evenly spread one tablespoon of the olive oil on the surface and season your turkey breast as desired with optional seasonings and .
Preheat the oven to 400 and prep a roasting pan or rimmed baking pan as needed- nonstick sprayed foil is recommended. Prepare an additional piece of foil with nonstick as this foil will be used to cover the turkey roll while baking.
Step Two: make the filling.
Heat the remaining two tablespoons of the olive oil in a skillet on low to medium heat for one minute.
Sauté the onion and garlic in the heated oil for two minutes, stirring as needed, and then add the spinach to the skillet. Cook for two more minutes, stirring as needed and then remove the skilled from the heat. Allow the mixture to cool and then stir in the mozzarella cheese.
Step Three: stuff the turkey breast and bake.
Evenly distribute the sautéed ingredients from the skillet leaving about an inch on the borders of the turkey breast. Starting at the smaller side of the turkey breast, carefully roll the turkey breast into a log. Then place the bacon over the roll as flat as possible. If you need to, use kitchen twine as needed to hold the ingredients together. Pour the wine over the bacon wrapped turkey and season again as desired with additional seasonings. Carefully transfer the turkey roll to your prepped pan and loosely cover with the sheet of foil that your prepared earlier.

Bake the turkey for 25 minutes and then remove the foil that is covering it and continue baking for a total of 50-55 minutes (another 25-30 minutes after removing the foil) or until the turkey reaches 165 internal temperature.
