    1. Both the caramel and the chocolate will need to be heated in a microwave-safe bowl. Since microwaves heat food differently from a stovetop, it is important that you stop to stir the melting ingredients as they are heated so that they can melt evenly.
    2. The ingredients will need to be dipped into the melted chocolate as a last step in making them. You can use a fork to do the dipping or what I really like, is a candy dipping tool which can make this recipe even easier to make!
    3. My recipe uses a microwave to melt ingredients. If you prefer to use the stovetop method of melting, it is a good idea to use a double boiler so that the ingredients melt evenly and do not burn.

    Ingredients needed to make this billionaires recipe.

    • Caramel Bits. Using bits means that you do not have to unwrap a bunch of caramels which is something that I like since it limits my sampling and the caramels melt faster and more evenly.
    • Water. Adding the water to the caramels will help them melt more evenly.
    • Chocolate Chips. I like milk chocolate chips for this recipe as they are easier to eat in a candy. However, you add some dark chocolate chips for a more decadent tasting candy if desired.
    • Coconut Oil. This is added to the chocolate to help it melt more smoothly. A neutral oil such as vegetable oil can also work but, coconut oil adds a bit of flavor to the candy too.
    • Pecans. Your pecans should be toasted pecans that are also chopped.
    • Cereal. The standard cereal to use is Rice Krispies kind of cereal as these pieces are small and crunchy which works perfectly in this recipe.

    Expert Tip 👉 There are so many options for adding additional ingredients such as raisins to this recipe. Try not to add too many ingredients however as this will throw the balance out and you may end up with not enough chocolate or caramel that is needed to hold the ingredients together.

    How to make this Easy Chocolate Billionaires Recipe

    Prep Time: 45 minutes

    Servings: 36 pieces

    Step One: prepare.

    • Line two rimmed baking sheets with wax or parchment paper. You can give parchment paper a quick spray with nonstick if desired.
    • If you have not toasted your pecans, evenly spread them out on a rimmed baking sheet and bake them at 350 for about five to six minutes until crisp, stirring or flipping as needed. Then let the pecans cool.
    • Gather the remaining ingredients.

    Expert Tip👉 You can make this recipe even easier to make by measuring out ingredients ahead of time.

    Step Two: melt ingredients in your microwave.

    • You can give your microwave-safe bowls a quick spray with nonstick to help make for an easier clean up.
    • For the caramel, place the caramel and the water in the first microwave-safe bowl and microwave on high for one minute. Carefully stir the ingredients and continue to microwave until smooth, stopping to stir every 20-30 seconds.
    • Next, in the other microwave-safe bowl, combine together the chocolate chips and the coconut oil. Microwave these ingredients on high, stopping to stir every 20-30 seconds, until smooth (should take about a minute and half total to melt depending on your microwave).

    Expert Tip👉 Carefully handle the bowls and stir as the ingredients may be hot.

    Step Three: finish making the candy.

    • Stir the pecans into the melted caramel and then stir in the cereal. I would add half of the cereal at a time, stopping to stir between additions.
    • Use a small cookie scoop to scoop out the ingredients from the caramel bowl and then dip the the scooped ingredients into the chocolate to coat them. Let the excess melted chocolate drip off (you can tap it a needed) and then place the coated candy on to the prepared baking sheets.
    • Lastly, place the dipped candies into your refrigerator to set.

    Expert Tip👉 After scooping out the ingredients for dipping, it may be easier to dip when the ingredients are transferred to a fork or dipping tool.
