    What you need to make to make Greek Yogurt Banana Bread

    Bread

    • Flour Regular all purpose.
    • Baking Soda For leavening.
    • Ground Cinnamon. For Flavor.
    • Brown Sugar Loosely packed.
    • Vegetable Oil. Another neutral oil, such as canola oil, can be substituted.
    • Eggs At room temperature.
    • Greek Yogurt. Plain full fat Greek yogurt.
    • Vanilla Extract For a bit of flavor balance.
    • Bananas Use very ripe bananas that have been mashed.

    Glaze, optional but really good!

    • Butter
    • Brown Sugar
    • Milk
    • Vanilla Extract
    • Chopped Pecans

    How to Make Moist Banana Bread Recipe

    Banana Bread Made With Greek Yogurt, A simple recipe for moist Banana Bread made with a protein-boosted alternative to butter.

    • Prep Time 15 minutes .
    • Bake Time 50–60 minutes .
    • Servings 12 .
    • How to serve : Serve warm as is any time of the day or cool as is for a snack.
    • Notes: You will need a loaf pan, mixing bowls, rubber spatula or similar item, and a cooling rack.

    1. Prepare. Preheat your oven to 350°F. Prep your loaf pan for nonstick. Greasing or parchment paper should work.
    2. Dry Ingredients. In a medium sized bowl, use a whisk to combine together the flour, baking soda, and ground cinnamon.
    3. Wet Ingredients. If you have not done so, mash your bananas in a large mixing bowl. A mixer or a potato masher should help to mash the banana. Then add the brown sugar, oil, eggs, yogurt, and vanilla extra to the bowl and mix until somewhat creamy .and smooth.
    4. Combine. Scrape down the sides of the mixing bowl and then fold in the dry ingredients from the first bowl to the large mixing bowl, folding in the ingredients until just combined.
    5. Bake. Transfer the ingredients to your prepared loaf pan. Gently tap the bottom of the pan on your countertop a few times to settle the batter. Bake the bread for 50-60 minutes or until an inserted toothpick comes out mostly crumb-free.
    6. Cool. Allow the bread to cool in the pan for five to 10 minutes before transferring to a cooling rack to fully cool
    7. Glaze. To make the glaze, in a small saucepan on medium heat, melt the butter and brown sugar whisking continually until melted. Then add the milk and vanilla extract and continue to whisk until the ingredients begin to bubble. Remove the ingredients from the heat and whisk in your chopped pecans. Then use a large spoon to coat the top of your fully cooled bread.
    8. Serve. Once the glaze has fully set, you can slice and serve your bread.

    Tips for making the best Greek Yogurt Banana Bread

    When selecting a Greek Yogurt, select a plain yogurt that is full fat. This will add the most moisture to your bread. Also, your Greek yogurt should be at room temperature.

    More helpful tips for you.

    1. For best results when mashing, your bananas should be very ripe. Not only will the ripe bananas add to the texture, they add their own natural sweetness to this recipe.
    2. Avoid over-mixing the batter as doing so will activate the gluten in the flour, which can result in a dense texture of your bread. Instead, when you combine together the ingredients do so until the ingredients are mostly combined and there are a few lumps visible.
    3. Also avoid overbaking your bread. The bread is done baking when a toothpick inserted into the center comes out with a few moist crumbs, and not wet batter. If the top of your bread appears to be browning too quickly you can tent it with a bit of foil.

    How to Store Easy Banana Bread

    Once your bread has fully cooled in can be stored in an airtight bread container for up to a few days at room temperature, refrigerated for up to a week, and frozen without the glaze for up to a few months. While you could wrap the bread in plastic or foil, doing to can affect the glaze.<
