You may be wondering what does bar cookie mean.
Bar cookie, or cookie bars, are cookies that are baked as bars.
To make cookies as bars you first need to make the cookie dough as you usually would .
Cookie bars are made differently however, than cookies.
Instead of forming cookies with pieces of the dough, you bake the cookie dough in one large piece. After the cookies have cooled from baking, you can cut them into bars.
How do you cut the perfect cookie bar?
Cutting the perfect cookie bar means that every cut piece is close to being the same size.
The goal is to cut the cookies so that they do not break apart as well.
Here is how to cut the cookie bars.
I actually like to place the sheet of baked cookie dough in the refrigerator for a short time to make sure that the cookies have fully cooled. I then run the knife under warm water and then dry off the water before using knife to cut the cookies.
Here are some tips for making this Halloween bars recipe.
I just mentioned a couple of tips for cutting the bars. Starting in the middle of the cookie sheet to make the first cut will help you keep the sizes of the bars even.
Here are some more helpful tips for you.
- The frosting on these bars is made with Orange Gel Food coloring. Feel free to use another color such as green or black.
- I am using Halloween inspired sprinkles to top these brownies. Feel free to use something else such as candy corn instead.
- Make your cookie portion of this recipe on a rimmed baking sheet lined with parchment paper that overlaps the edges of the sheet. This will make it easier for you to transport the cookies off of the baking sheet and on to a flat surface for cutting!
How to make Sugar Free Halloween Cookie Bars.
Really, there are just a few ingredient substitutions that you can make in order to make this recipe lower in sugar. You may however, need to adjust the baking to 350 as sugar alternatives do not always bake like sugar in a recipe.

Here are the ingredient substitutions that you can make.
- Instead of brown sugar use a brown sugar alternative such as Surkin Gold.
- Also, instead of granulated sugar, use a sugar alternative such as Splenda or Monk fruit, that measures like sugar and can be baked with.
- And, use sugar free powdered sugar for the frosting.

Step 1. Preheat your oven to 375. Prep a rimmed baking sheet with parchment paper that overlaps the edges of the baking sheet.
Step 2. In a medium mixing bowl, use a whisk or a fork to mix together the flour, baking powder, salt, and cocoa powder. Then, in a large mixing bowl, beat together the butter and the two sugars.
Step 3. Add the dry ingredients from the first bowl to the ingredients in the large mixing bowl. Then add the eggs, vanilla and milk. Beat until just mixed. Then transfer the batter to the lined baking sheet and evenly press it into the pan. Bake for 12-15 minutes until the center of the dough is set. Do not over-bake however. Remove the cookies from the oven and allow to fully cool in the pan.
Step 4. To make the frosting, beat together the frosting ingredients, except for the orange gel and sprinkles, until fluffy. Then add food coloring as needed (3-6 drops should do it) to get the color orange enough for your brownies. Spread the frosting evenly over the fully cooled bars. Sprinkle the toppings over the bars and cut into 24 squares. Leftovers can also be stores in an airtight container.
