Pudding mix cookies made with funfetti sprinkles.

Sometimes called cake batter cookies, these cookies are a fun dessert or snack thanks to the colorful sprinkles.

The pudding mix added to these cookies gives them a unique texture and flavor that sets them apart from other cookies, making them a favorite for about anyone.

Have you tried my recipe for Cake Mix Red Velvet Cookies?

Instead of pudding, those cookies are made with cake mix which also makes them taste and look better. Both these funfetti cookies and those red velvet cookies are easy and delicious cookies that can be made quickly.

To make this recipe you will need instant vanilla pudding. You can find a selection of instant vanilla pudding here.

What does adding pudding mix do to cookies?

We are adding dry pudding mix to this recipe to add moisture and flavor to the cookies. In general, adding pudding mix to cookie dough can create a more uniform texture and appearance in the cookies as a whole, giving them a consistent and appealing look.

Instant pudding mix adds to the texture of the cookies.

Thanks to the starches and gelatin in the pudding mix, cookies become slightly denser with a smoother and more tender texture. Also pudding mix can help thicken the cookie dough, which can prevent the cookies from spreading too much during baking.

Tips for making the best funfetti cookies.

Make sure that you are using instant pudding mix rather than a regular pudding mix. The difference between regular pudding mix and instant pudding mix is that instant pudding mix is pre-gelatinized, meaning that the starch has already been cooked and dissolved in liquid.

    More tips for you.

    1. Using room temperature dairy ingredients (butter and eggs) is essential in this recipe. This is because when the ingredients are at room temperature they are allowed to blend evenly with the other ingredients.
    2. While not an actual step in making these cookies, you could chill the cookie dough before scooping it out to make the cookies. Chilling the dough can help make the cookies even more fluffy.
    3. I like to refrigerate or freeze my sprinkles before using them in a recipe such as this one. This helps prevent the color spread that you see in many similar cookie recipes that also have sprinkles in them.

How to make funfetti cookies even better.

These cookies are delicious and easy to make just the way they are.
You can however make yours even better.

    • Flour. All purpose flour was used to make my cookies. If you use an alternative flour, it should measure and bake like all purpose flour for best results.
    • Instant Vanilla Pudding Mix. Use a 3.5 ounce dry mix of instant pudding.
    • Baking Soda and Salt . Use a larger salt such as Kosher salt.
    • Butter. The butter should be softened to room temperature.
    • Brown Sugar and Granulated Sugar. Helps to make these cookies sweet and moist.
    • Vanilla Extract. Added as a flavor enhancer.
    • Egg. Your egg should be at room temperature for better blending.
    • Egg Yolk. An egg yolk can help make these cookies even more chewy and moist.
    • Funfetti Sprinkles. Really, any Jimmy style sprinkle will work in this recipe.
    • White Chocolate Chips. Use a white chocolate chip for baking rather than the melting kind as baking chips will hold up in the oven.

Expert Tip👉 Nonpareil sprinkles do not bake well which is why the 'Jimmie' or confetti style sprinkle is recommended for this recipe.
