- Strawberries. Your strawberries should be rinsed, drained, and have their stems and leaves removed.
- Cake Mix. Vanilla cake mix offers a nice complement to the strawberries.
- Eggs. Your eggs should be at room temperature.
- Vegetable Oil. Another neutral oil such as canola can be used instead.
- Water. Added for additional moisture.
- For the frosting you will need softened butter, powdered sugar, vanilla extract, milk, and freeze dried strawberries for decoration (sprinkles also work).

Tips for making the best vanilla cupcakes with strawberries.
Vanilla cake mix was used to make my cupcakes but, you can use the cake mix of your choice. Note that you do not need the ingredients to actually make those cupcakes as we are using ingredients that are needed to make this specific recipe instead.

- Feel free to make this recipe using another berry with or instead of the strawberries. Blueberries can probably be added as is rather than dicing them up.
- Mix the cake batter until just blended. That is, do not over mix the cake batter as this can hinder the texture of your cupcakes.
- Your cupcakes should be fully cooled before attempting to carve a hole for your strawberries.
- When making the holes for your strawberries, only make it about three quarters deep into the cupcakes. Going all the way into the bottom of the cupcakes can make for a messy experience.
- While you can use a paring knife of similar object to make the holes, I like to use an apple corer as it can make a cleaner cut and is a bit safer to use.
- If you intend to serve your cupcakes later in the day or the next day, you may want to wait to frost them as the buttercream can lose its structure. Plus, it is easier to store unfrosted cupcakes.
How to make Strawberry Filled Vanilla Cupcakes
Prep Time: 20 minutes.
Bake Time: 20 minutes.
Servings: 18 average sized cupcakes.
- Preheat your oven to 350 and prep your cupcake pan for nonstick. Cupcake liners were used in making my cupcakes.
- Next, place your cake mix in a large mixing bowl and use a fork or whisk to break up any lumps. Add the eggs, oil and water to the mixing bowl and mix until just combined. Then use a medium cookie scoop to scoop the batter into your prepared cupcake pan.
- Bake your cupcakes for 18-20 minutes or until the top of the cupcakes spring back when touched and a toothpick inserted into the middle of the cupcake comes out clean. Then transfer the cupcakes to a cooling rack to fully cool.
- While your cupcakes are cooling, in a good blender or food processor, pulse your strawberries until they are finely chopped but, not a liquidly consistency.
- Once the cupcakes have FULLY cooled, use an apple corer or or handle from a wooden spoon to dig a hole in the top of the cupcakes. You can discard the cupcake portion that you dug out. Then use a teaspoon to place the processed strawberries into the hole that you just dug out.
- To make the frosting, beat together the butter, powdered sugar, vanilla extract, and milk for about three minutes on medium-high speed until creamy. While your frosting is beating, you can mash up the freeze dried strawberries into powder using a mortar and pestle, food processor, or blender. Then beat this into frosting until combined. You can skip this step or use a tablespoon or two of (dry) strawberry jello if do not have the freeze dried strawberries.
- Use a piping bag or a frosting spatula to frost over the hole and cover the tops of your cupcakes before serving.
Expert Tip 👉 If your frosting becomes too dry or grainy after adding the strawberry powder you can add a teaspoon or two more milk and continue to beat until smooth and creamy.
How to store Strawberry Filled Vanilla Cupcakes.
These cupcakes can be stored in an airtight container such as a cupcake holder such as a carrier or box. When properly stored, these cupcakes should keep for upt to a few days at room temperature.
