Whipping the heavy whipping cream into stiff peaks is crucial to the texture of the ice cream. If is not whipped enough the ice cream will be crumbly, rather than creamy, when you scoop it out for serving.

- Your peaks are stiff when they are able to wholly hold their shape. Note that over beating the whipping cream can result in a thick butter-like consistency.
- Refrigerating the mixing bowl and beaters before whipping the cream is also recommended. This will help with the structure of the stiff peaks.
- Using a stand mixer to whip the cream will make your efforts much easier in this recipe.
- When dicing up your turtle candies, make sure that the pieces are small enough to enjoy in a bite of cold ice cream and large enough to enjoy the flavors.
- Use a loaf pan to freeze your ice cream in. An ice cream loaf pan will often come with its own lid too.

- Start by placing your loaf pan into your freezer to get cold while you work
- Combine together the sweetened condensed milk and the vanilla extract in a bowl using a whisk.
- In a mixing bowl that has been chilled, use a whisk attachment or similar item to beat the heavy whipping cream on medium speed until stiff peaks form (about four to five minutes). The stiff peaks should be able to stand on their own
- Once the stiff peaks have formed, use a rubber spatula or similar item to carefully fold in the ingredients from the first bowl with the whipped cream. Then fold in the turtle candies pieces.
- Transfer about half of the ingredients from the mixing bowl to the loaf pan, spreading it out evenly. Then top this layer with the half of the pecans, fudge sauce and caramel sauce. Then repeat this process with the remaining mixture from the bowl and topping that with the remaining ingredients once again.
- Cover the loaf pan with plastic wrap or foil and then place the loaf pan in your freezer to set. It should take between six and eight hours for you ice cream to fully set.
Expert Tip 👉 Stirring the ice cream while it is freezing can help prevent ice crystals from forming. You can do this up to every hour until the ice cream has fully set.
How to store no churn ice cream.
Leftover ice cream should be stored in an airtight freezer container such as an ice cream container. If properly stored, this ice cream should keep for up to a couple of months before ice crystals begin to form.
