Ingredients needed to make S'mores Cooki Bars.

    • Graham Crackers. You will need to crush the crackers into crumbs.
    • Butter. Your butter should be softened to room temperature. Salted or unsalted butter can be used. You can add a half teaspoon of salt to the crust ingredients if you are using unsalted butter.
    • Sugar. Used to sweeten the crust layers.
    • Egg. This is added to hold the crust ingredients together. Use a room temperature egg for best results.
    • Flour. Also used in making the crust.
    • Baking Powder. Added to give a bit of leavening to the crust.
    • Milk Chocolate Bars. Such as Hershey's or a similar bar.
    • Marshmallow Cream. This is a spreadable cream version of marshmallows that works best in a layered bar recipe.

Tips for making the best S'More Cookie Bars.

Graham cracker crumbs are used in making the crust in this recipe. You can use a food processor or place the crackers into a zip top bag and use a rolling pin to crush them.

    More helpful tips for you.

    1. For thicker bars you can use a smaller baking pan. To make more and thinner bars you can use a larger square baking pan.
    2. You can take these bars up a notch by adding chopped nuts, coconut flakes, or white chocolate chips to the filling layer.
    3. Can you use real marshmallow to make this recipe? Unfortunately real marshmallows do not hold up well in the baking of these bars.
    4. Do you have to use graham crackers to make the crust? Really about any crunchy cookie that has no filling can be used. Look for a crunchy cookie such as vanilla wafer or butter cookie, as they can be easily crushed to make a crust.
    5. How will I know when my cookie bars are done baking? You cookie bars will be done baking when the top layer is set in the center and has turned golden brown.

How to make this S’More Cookie Bars Recipe.

    Prep Time:: 15 minutes .
    Bake Time : 30 minutes .
Servings : 16, depending on how they are cut .

    1. Preheat your oven to 350 and prep a square baking pan for nonstick. My bars were made in a nine inch square pan.
    2. To make the crust you will first need to crush the graham crackers and then place the crumbs into a medium bowl.
    3. Add the flour and baking powder to the bowl with the graham cracker crumbs and use a whisk or similar item to combine the ingredients.
    4. In a large mixing bowl, beat together the butter and sugar until creamy. Then stir in the egg and vanilla extract.
    5. Add the dry ingredients from the first bowl to the mixing bowl and mix until combined. Then take about half of the mixture and press it into the bottom of your prepared baking pan to make the bottom crust.
    6. Arrange the chocolate bars over the bottom layer so that they are evenly spread out. You can break up the bars if needed.
    7. Use a rubber spatula to dollop and evenly spread the marshmallow cream over the chocolate bars.
    8. To make the top layer, use a tablespoon to scoop out the remaining dough in pieces and press the dough flat between your hands. Then place the dough pieces on top of your marshmallow fluff, pinching together the edges of the dough pieces so that the marshmallow layer is fully covered with the dough.
    9. Bake the bars for 25-30 minutes or until the top crust layer is golden brown. Allow the bars to completely cool in the baking pan before removing them for slicing.

Expert Tip 👉 If your marshmallow fluff sticks to your rubber spatula your can spray the spatula with nonstick to help keep the fluff from sticking.
