    While you could use a whisk to combine together your dry ingredients, sifting is really recommended for this recipe. Sifting helps in introducing air to the ingredients as well as breaking up lumps in order to ensure an even rise and baking.

    Bake Time: 13 minutes .
    Servings: 36 mini muffins .

    1. Start by preheating your oven to 375 and prepping your mini muffin pan for nonstick.
    2. Use a whisk or a fork to combine together the flour, baking powder, and sugar in a medium mixing bowl.
    3. In a large mixing bowl, use a clean whisk to mix together your milk, melted coconut oil, egg, and vanilla extract until fully combined. Then add the dry ingredients from the first bowl to these wet ingredients and mix until just combined.
    4. With a rubber spatula, gently fold in the sprinkles.
    5. Use a small cookie scoop to evenly fill the muffin batter into the muffin liners about ¾ths full.
    6. Bake your muffins for 10-13 minutes or until the tops are golden brown or a toothpick comes out clean
    7. Let the muffins cool in the pan for five minutes before transferring to a cooling rack to fully cool.
