Apple fritter muffins are a combination of apple fritters and muffins that are oven baked and then coated with a sweet glaze.
I like that these muffins are oven baked rather than fried like most fritters are.

Ingredients needed to make oven baked apple fritters.
- Flour. All purpose flour was used to make my muffins.
- Baking Powder and Baking Soda. Both are added for leavening.
- Sugar. Use regular granulated sugar.
- Apple Pie Spice. Gives these muffins a festive fall flavor.
- Vanilla Extract. Added for a bit of flavor balance.
- Milk. Whole milk will add the best moisture to these muffins.
- Butter. Your butter should be melted and cooled to room temperature. If you are using unsalted butter you can add a half teaspoon of salt to the flour.
- Apple Cider Vinegar This aids in the leavening to make these muffins light and fluffy.
- Apple. Your apple should be peeled and then cut into small chunks or pieces. You will need about one medium size apple.
- Oil. Use a neutral oil, such as vegetable oil, to prep your pan with.
- For the glaze you will need powdered sugar, vanilla extract, and milk.

Tips for making the best apple fritters.
When selecting an apple, choose a baking apple or an apple that can hold up to being baked in an oven. I like Granny Smith, Honeycrisp, or Jonagold apple for example.
More helpful tips for you.
- For a more unique flavor, you can use two different kinds of baking apple such as Fuji (sweet and crisp) and Granny Smith (firm and tart).
- The easiest way to peel an apple is to use an apple peeler.
- My muffins were made in an averaged sized muffin pan. Feel free to use a mini-muffin pan or a jumbo sized pan however, baking times will vary.
- Brushing oil is used to prep the pans as these muffins can stick to the usual liners. The oil will also give these muffins a slightly crisp outside that kind of resembles a fried fritter.
- When selecting an oil, use a neutral oil, such as vegetable or canola, so that it has little effect on the flavor of your muffins.
- Do you have to add the glaze to these muffins? No. While the sweet glaze will balance out the 'tartness' in the muffins, you can omit it or simply dust the tops with powdered sugar instead.
