    • Brown Sugar Light brown works best but, you can use regular brown as well for a great tasting cookies.

    2. Dry Ingredients. In a medium bowl, use a whisk to combine together the flour, unsweetened cocoa powder, baking soda and salt.
    3. Sugar Using a large mixing bowl, beat together the softened butter with both the brown and white sugars until smooth and creamy. Then beat in the egg and vanilla extract until combined.
    4. Combine. Scrape down the sides of the mixing bowl and then set your mixer on slow speed and slowly add the dry ingredients from the medium bowl to the mixing bowl. Mix the ingredients until just combined.
    5. Chocolate Chips. Use a rubber spatula or similar item to fold in a half cup of the chocolate chips.
    6. Scoop. Use a cookie scoop (large for the ultimate cookie and medium or small for smaller yet, more cookies) to scoop out the cookie dough. Place the scooped cookies on to your baking sheet about two inches apart from one another. Top the cookies with the remaining chocolate chips by gently pressing them into the tops of the cookies.
    7. Bake. Bake the cookies for 10-12 minutes or until the the edges appear to be fully set and the centers are somewhat set.
    8. Set. Allow the cookies to sit on the baking sheets for 10 minutes to continue to set before transferring them to a cooling rack.

    Regular unsweetened cocoa powder was used to make these cookies. For a deeper color and smoother flavors, you can use Dutch-Processed cocoa instead.
