    Refrigerating the dough is important to this recipe. This will make it easier to cut out the shapes of the cookies for baking .

    1. Short on time? Instead of making your own shortbread cookies you can use premade shortbread cookies.
    2. Not a fan of shortbread cookies? You can use another crunchy cookie such as butter cookies.
    3. Or if you are not a fan of peanut butter, you can use another nut butter such as almond butter.
    4. To dip the cookies, in order to coat them with chocolate, use a shallow bowl for your melted chocolate. Then a fork can be used to dip them into the chocolate.
    5. Coconut oil is used for the chocolate coating because it is able to harden correctly as a covering for the cookie. While you could use another oil, coconut oil really is the best choice.
    6. You can drizzle additional melted chocolate over your cookies to make a design or for holiday season you can sprinkle some holiday sprinkles on top.

    How to make Copycat Tagalong Cookies

    Prep Time : 25 minutes .
    Bake Time: 15 minutes .
    Servings: 24 cookies .

    1. Shortbread Dough. In a large mixing bowl beat together your butter and powdered sugar until fluffy (about seven minutes) stopping to scrape down the sides occasionally. Then scrape down the sides of the bowl and add your flour and then mix the ingredients until combined.
    2. Refrigerate. Transfer your cookie dough to a piece of parchment or wax paper. Shape the dough into a square and then wrap the dough in plastic wrap and refrigerate for at least an hour.
    3. Bake. Preheat your oven to 350 and prep a rimmed baking sheet (or two) for nonstick. Parchment paper or a baking mat can work. Roll the cookie dough out to a half inch thickness and use a round cookie cutter to cut the cookies out. Place the cookies about an inch apart on the baking sheet and bake for 12 to 14 minutes or until the cookies begin to brown around the eds. Allow the cookies to fully cool.
    4. Peanut Butter Filling. Beat together the peanut butter, powdered sugar, and vanilla until creamy. Then carefully place a dollop on top of each cookie and spread it over the top of the cookie (thicker on top and tapered to the sides of the cookies (image 2).
    5. Chocolate. In a large microwave-safe bowl, melt together the chocolate and coconut oil, stopping to stir every 30 seconds.
    6. Coat. Line a rimmed baking sheet with wax or parchment paper. Then use a fork or a spoon to dip each cookie into the melted chocolate and then place it onto the baking sheet to set (Image 3).
    7. Set. Transfer the baking sheet to your refrigerator and refrigerate until fully set.

    Expert Tip 👉 Overbaking your cookies can result in dry and crumbly cookies that will not hold up to the filling and covering. Also, allow your cookies to cool completely before adding the filling and dipping them into chocolate to prevent the chocolate and peanut butter from melting.

    How to store Copycat Tagalongs

    Once your cookies have fully cooled and set, they can be stored in an airtight container. When properly stored, Tagalong style cookies should keep for about a week when refrigerated or up to a few months when frozen.
