About this tasty recipe for chicken casserole.
This is a quick and easy recipe that is as much about the convenience as it is about taste.
It is made with simple ingredients and takes about a half hour to bake.
We will start by adding cubed chicken breast to the bottom of the baking dish.
Then we will top the chicken with the remaining ingredients.
After topping the ingredients with the cheese, we will bake it in the oven.
Ingredients needed to make this Chicken Fajita Casserole
- Chicken Breast. The chicken breast should be trimmed and also cut into cubes that are about one to two inches.
- Bell Peppers. Red, yellow, and green. The peppers should first have their stems and seeds removed before slicing them thin.
- Onion. The onion should also first be sliced thin. I like a white onion for this recipe.
- Lime Juice. Freshly squeezed lime juice is preferred.
- Heavy Whipping Cream. Added for creamy moisture and to balance out the ingredients as a result.
- Fajita Seasoning. Can you alternatively use a taco or, for example, a similar seasoning? Sure if you prefer to us a seasoning besides the fajita seasoning.
- Shredded Cheese. My casserole was made with monterey jack cheese however, you could use the cheese of your choice including a Mexican blend.
- Cilantro. Added for garnish.
- Serve this with chips, taco shells, tortillas, or with rice and beans.
How to make Chicken Fajita Casserole
Prep Time: 10 minutes
Cook Time: 30 minutes
Servings: 6-8.
Step One: prepare.
Preheat your oven to 400. Prep a 9x13 baking dish well for nonstick.
Step Two: assemble the casserole.
- First, place the chicken in a large bowl with the seasoning and use your hands to toss the chicken in the seasoning. Then transfer the chicken to your prepared baking dish, evenly spreading it over the bottom of the dish.
- Next, evenly top the chicken with the peppers, onions, heavy whipping cream and lime juice.
- Lastly, cover the ingredients with your cheese.
Step Three: bake and serve.
- Bake the casserole in the center of your oven for 25-30 minutes or until the chicken is no longer pink.
- Finally, garnish the casserole with the cilantro before serving.
- Refrigerate the leftovers covered for about four days.
