    My chicken fajitas were made in a basic 9X13" casserole dish. You can alternatively make yours in separate or individual baking dishes or even in an oven proof cast irons skillet, adjusting the baking time as needed.

    1. Make this recipe even easier by using precooked chicken (like leftovers or rotisserie). You will be able to cut down the baking time using chicken that is already cooked!
    2. Or, you can make this a vegetarian or vegan recipe by using a vegan chicken alternative. A vegan cheese alternative can also be used. Adjustments in baking may be needed for these ideas.
    3. The seasonings that are used for the chicken can be really spicy. I suggest that you wash your hands after using it as a result.

    This is a quick and easy recipe that is as much about the convenience as it is about taste.
    It is made with simple ingredients and takes about a half hour to bake.

    Ingredients needed to make this Chicken Fajita Casserole

    • Chicken Breast. The chicken breast should be trimmed and also cut into cubes that are about one to two inches.
    • Bell Peppers. Red, yellow, and green. The peppers should first have their stems and seeds removed before slicing them thin.
    • Onion. The onion should also first be sliced thin. I like a white onion for this recipe.
    • Lime Juice. Freshly squeezed lime juice is preferred.
    • Heavy Whipping Cream. Added for creamy moisture and to balance out the ingredients as a result.
    • Fajita Seasoning. Can you alternatively use a taco or, for example, a similar seasoning? Sure if you prefer to us a seasoning besides the fajita seasoning.
    • Shredded Cheese. My casserole was made with monterey jack cheese however, you could use the cheese of your choice including a Mexican blend.
    • Cilantro. Added for garnish.
    • Serve this with chips, taco shells, tortillas, or with rice and beans.

    How to make Chicken Fajita Casserole

    Prep Time: 10 minutes
    Cook Time: 30 minutes
    Servings: 6-8.



    Step One: prepare.

    Preheat your oven to 400. Prep a 9x13 baking dish well for nonstick.

    Step Two: assemble the casserole.

    1. First, place the chicken in a large bowl with the seasoning and use your hands to toss the chicken in the seasoning. Then transfer the chicken to your prepared baking dish, evenly spreading it over the bottom of the dish.
    2. Next, evenly top the chicken with the peppers, onions, heavy whipping cream and lime juice.
    3. Lastly, cover the ingredients with your cheese.

    Step Three: bake and serve.

    1. Bake the casserole in the center of your oven for 25-30 minutes or until the chicken is no longer pink.
    2. Finally, garnish the casserole with the cilantro before serving.
    3. Refrigerate the leftovers covered for about four days.

    Expert Tip 👉Serve this dish with white rice or/ and Mexican blend rice.
    Also, in addition, for presentation, style the final dish with lime slices and/or wedges.
