Technically, Fajitas are said to be a "Tex-Mex" dish rather than Mexican cuisine.
Originally, fajitas were made with steak however, folks enjoy many variations of fajitas these days.

Fajitas are strips or pieces of meat/chicken/protein that are cooked quickly in a skillet with sliced onions and peppers. They are also served with with tortillas, which can be used to hold the ingredients for consumption.

This recipe for fajita casserole takes the ingredients that are commonly used to make fajitas and baked them in a casserole dish rather than on a skillet.

What do you serve with fajita casserole?

As you can see, my fajita casserole was served with rice on the side.

    Easy tips for Making Fajitas.

My chicken fajitas were made in a basic 9X13" casserole dish. You can alternatively make yours in separate or individual baking dishes or even in an oven proof cast irons skillet, adjusting the baking time as needed.

    More tips for you

    1. Make this recipe even easier by using precooked chicken (like leftovers or rotisserie). You will be able to cut down the baking time using chicken that is already cooked!
    2. Or, you can make this a vegetarian or vegan recipe by using a vegan chicken alternative. A vegan cheese alternative can also be used. Adjustments in baking may be needed for these ideas.
    3. The seasonings that are used for the chicken can be really spicy. I suggest that you wash your hands after using it as a result.

About this tasty recipe for chicken casserole.

This is a quick and easy recipe that is as much about the convenience as it is about taste.
It is made with simple ingredients and takes about a half hour to bake.

We will start by adding cubed chicken breast to the bottom of the baking dish.

Then we will top the chicken with the remaining ingredients.
After topping the ingredients with the cheese, we will bake it in the oven.

Chicken Fajita Casserole, a simple one dish recipe that can you can make in about a half hour. This recipe feeds six to eight people.

Ingredients needed to make this Chicken Fajita Casserole

    • Chicken Breast. The chicken breast should be trimmed and also cut into cubes that are about one to two inches.
    • Bell Peppers. Red, yellow, and green. The peppers should first have their stems and seeds removed before slicing them thin.
    • Onion. The onion should also first be sliced thin. I like a white onion for this recipe.
    • Lime Juice. Freshly squeezed lime juice is preferred.
    • Heavy Whipping Cream. Added for creamy moisture and to balance out the ingredients as a result.
    • Fajita Seasoning. Can you alternatively use a taco or, for example, a similar seasoning? Sure if you prefer to us a seasoning besides the fajita seasoning.
    • Shredded Cheese. My casserole was made with monterey jack cheese however, you could use the cheese of your choice including a Mexican blend.
    • Cilantro. Added for garnish.
    • Serve this with chips, taco shells, tortillas, or with rice and beans.
