    For the popcorn, it is best to use largest, lightest and fluffiest kernels. Air popped popcorn is recommended as the popcorn has the least amount of moisture in it and is pure corn.

    1. This recipe has an option for using a paper bag to combine and cook ingredients. If you use this convenient method, make sure that your bag is microwave safe and use caution as needed for handling the popcorn.
    2. If you are using the oven method for combining and cooking ingredients, it is a good idea to carefully stir the ingredients every 15 minutes or so while they are in the oven to allow the ingredients to bake evenly.
    3. Feel free to use more popcorn than was used in mine. This will spread out the sweetness from the caramel and chocolate.
    4. Use more than one kind of chocolate for your drizzle. Melted white chocolate chips look great on top of the chocolate for example.
    5. You can stir in pretzels, cereal, or seasonal candies to make this snack mix even more fun.

    How to make Easy Chocolate Caramel Popcorn

    Prep Time: 15 minutes. .
    Bake Time: 8 -60 minutes, depending on the method you use. .
    Servings: 16 .

    1. Grease or prep a rimmed baking sheet(s) or large roasting sized pan for nonstick. This is used for both methods. If you are using the oven method, preheat your oven to 250.
    2. If you have not done so, pop your corn. Then transfer the corn, along with the nuts, to the prepared sheets (oven method) or plain paper bag (microwave method).
    3. To make the caramel coating, in a microwave-safe bowl, combine together the brown sugar, butter, corn syrup, vanilla, and salt. Microwave this on high for two minutes and then stir. Continue to microwave for an additional two minutes or until the mixture is rapidly bubbling.
    4. Carefully stir in the baking soda to the bubbling mixture( the mixture should begin to foam). Then pour the mixture over your popcorn and nuts.
    5. For the microwave bag method, shake the ingredients in the bag to coat them. Then roll down the sides of the bag and place it into the microwave. Cook the ingredients on high for two minutes, stopping to stir or shake the bag to mix every 45 seconds. Then carefully transfer the mixture to the prepared pan from the first step.
    6. To use the oven baked method rather than the microwave method, pour or drizzle half of the caramel topping over the popcorn. Use two large serving spoons (or similar items) to toss the ingredients. Then repeat this step with the remaining caramel topping to coat the popcorn. Bake the popcorn in your preheated oven, stopping to stirring every 15 minutes, until the caramel topping is set and the ingredients are dry.
    7. To add the chocolate drizzle, combine together the chocolate chips and the shortening in a microwave-safe bowl and microwave on high for two minutes or until melted and smooth, stopping after every 30 seconds to stir the ingredients. Then use a spoon to drizzle the chocolate over the popcorn.
    8. Allow the drizzle to fully set and cool before serving.

    Expert Tip 👉 These directions offer two methods (oven or microwave) for cooking the caramel topping into the popcorn. Both methods will use the same directions for the chocolate drizzle. The difference between the two methods is that the microwave method uses a paper bag and takes less time.

    • 16 cups Popcorn - popped

    • 1 cup Brown Sugar

    • 1 tsp Vanilla Extract
    • 1 tsp Salt
    • ½ tsp Baking Soda
    • 1 cup Chocolate Chips
    • 1 tsp Shortening
