Ingredients needed to make taco casserole.
- Ground Beef. Used to make the taco meat.
- Green Bell Pepper. Remove the stem and seeds before dicing the pepper.
- Onion. The onion should also be diced. A red onion was used to make my bubble up but, a white onion could also work.
- Taco Seasoning. Use the taco seasoning of your choice.
- Red Enchilada Sauce Select the temperature sauce of your choice.
- Diced Tomatoes with Chilis. Regular canned diced tomatoes can alternatively be used. The liquid should be drained before adding it to the bubble up.
- Salsa. Again, any temperature should work.
- Cheddar Cheese. I like sharp cheddar cheese for this recipe. The cheese should be shredded.
- Refrigerated Biscuit Dough. You can use a 'buttery' biscuit or the biscuit of your choice for you base.

Tips for making the best bubble up bake.
Use a large (9X13") casserole dish that has good walls on it.
This will help hold the ingredients in place while baking.

- Do a good job at prepping your casserole dish for nonstick. This will make for an easier clean up.
- Instead of biscuit dough, use pizza dough to make this into a pizza.
- You can use ground turkey or a ground vegan alternative instead of ground beef in this recipe.
- A quick cheat would be to use pre-cooked beef or canned chili.
- While my casserole was made with cheddar cheese, you can use another cheese with or without cheddar. I like a Colby Jack blend for example.
- This recipe can also be made using enchilada or another seasoning instead of taco seasoning.
How to make Easy Beef Taco Bubble Up
Prep Time: 12 minutes.
Bake Time: 30 Minutes .
Servings: 8 .
- Start by preheating your oven to 375 and prepping a large baking dish well for nonstick.
- To cook the meat, in a large skillet on medium-high heat, cook the meat, stirring occasionally, until crumbly no longer pink. Then carefully drain off the excess fat from the skillet.
- Add the peppers and onions to the skillet and cook for two minutes, continuing to stir as needed.
- Next, stir in the seasoning, sauce, diced tomatoes, and salsa. Stir and cook the ingredients until thickened (about four to five minutes).
- Remove the skillet from the heat and stir in half of the cheese.
- To layer the ingredients for baking, start by separating the dough into biscuits. Cut each biscuit in half and then cut each half in half and those halves in half again. Each biscuit half should make four pieces so that there are eight per biscuit.
- Place the biscuit pieces in the bottom of your prepared baking dish and then layer the ingredients from the skillet over the biscuits. Use a rubber spatula or similar item to give the ingredients a quick stir.
- Top the ingredients with the remaining cheese
- Bake the bubble up casserole for 25-30 minutes uncovered until the biscuits are golden brown and fully cooked through.
- Carefully remove the casserole from the oven and allow it to cool for ten minutes before serving. You can serve the bubble up with with toppings such as additional cheese, green onions, sour cream, or shredded lettuce.
Expert Tip👉 This recipe can be made lower in fat by using lower fat ground beef. You may want to add a small amount of oil to the skillet while cookie it and allow the cooked beef to sit for a few minutes on a stack of paper towels before making this recipe.
How to store leftover bubble up.
Once the ingredients have fully cooled, they can be stored in an airtight container, foil, or a zip top bag. When properly stored, the leftovers should keep for up to four days when refrigerated and frozen for up to a few months.
