- Shredded Hash Brown Potatoes. A bag of store bought frozen section hash brown potatoes was used to make my casserole. Your potatoes should be thawed first.
- Sausage. Pork sausage was used to make my casserole. Chorizo or turkey sausage are other options. The sausage should also be cooked.
- Seasoning. A packet of taco seasoning was used in my casserole.
- Salsa. Your choice on how hot your want yours. I am partial to the mild or medium however.
- Cheddar Cheese. The cheese should be shredded. I prefer a sharp or extra sharp in this recipe.
- Eggs. This is the base of the casserole.
- Milk. To make the casserole fluffy.

Tips for making the best breakfast casserole.
Cook your sausage until it is cooked through and browned. Then let it drain to get rid of the excess fat (unless you are a fan of the excess fat).

Bake Time: 50 Minutes .

- If you have not done so, brown your sausage in a large skillet on medium heat until cooked through and crumbly.
- Preheat your oven to 375 and prepare a 9 X 13 casserole dish for for nonstick.
- On the bottom of the dish, evenly spread out the shredded hash browns until the bottom of the casserole dish is covered.
- On top of the hash browns, evenly distribute the cooked sausage. Then top the sausage with the salsa.
- Sprinkle the cheese evenly over the salsa.
- In a large bowl, whisk together the eggs, milk, and seasoning until combined. Then pour this on top of the ingredients
- Loosely cover the casserole with foil and bake for 30 minutes. Carefully remove the foil and then bake for another 20 minutes or until the eggs are baked through. You can test the eggs for doneness by carefully inserting a knife in the center and if it comes out clean, the eggs are done baking.
- Remove the casserole from the oven and sprinkle any additional desired cheese on top. Then let the casserole sit for five minutes to set enough to cut into servings.

Once the casserole has fully cooled it can be stored in an airtight container. When properly stored and refrigerated, this casserole should keep for up to four days.
