- Chicken. Since the chicken will need to be shredded, using boneless and skinless breast is suggested.
- Hot Sauce. Your choice of sauce. Since this will be used to cook the chicken in, your sauce will be diluted with water.
- Cream Cheese. Use a full-fat cream cheese block that has been cut into chunks.
- Cheddar Cheese. The cheese should be shredded. You can use store bought shredded cheese or shredded from a block. I prefer the sharper cheese for this recipe but, any should do.
- Ranch or Blue Cheese Dressing. Use a full-fat dressing for optimal creaminess.
- Optional Add-Ins. Blue cheese crumbles, chopped green onion, additional cheese (your choice), sliced olives, or even jalapeños.

Shredding the cooked chicken breast is relatively easy to use. I like to place the chicken in a large bowl and use two forks to do the shredding with.

Prep Time-5 minutes.
Cook time – 30 minutes.
Total Time- 35 minutes.

- Cook the Chicken. Place the chicken in your instant pot or pressure cooker and saute it with hot sauce and water. You can skip this step if you chicken is cooked.
- Shred the chicken. Once the chicken is cool enough to work with, you can shred it.
- Saute the remaining ingredients. Place your remaining ingredients into your cooker and saute them so they melt together into a creamy dip.
- Add the shredded chicken. Place your shredded chicken back into your pot and blend it with the creamy ingredients.
- Top and serve the dip as desired. Celery, crackers, tortilla chips, or anything you like to dip with.
Expert Tip👉 You can make this recipe in a slow cooker. Add the ingredients (chicken should be cooked and shredded) in a slow cooker on high for up to two hours, stirring as needed, until creamy.

How to store homemade buffalo chicken dip.
Once the dip has fully cooled, you can store it in your refrigerator. If properly stored, this dip should keep for up to a few days. To reheat this dip, you can microwave it in 30-second increments, stirring as needed, until heated through. Freezing can be done but, is not recommended as ingredients tend to separate.

Instant Pot Buffalo Chicken Dip

- 1 lb Chicken Breast - about 2 to 3 breasts
- ½ cup Hot Sauce
- ½ cup Water
- 8 oz Cream Cheese
- 1 cup Cheddar Cheese - shredded
- ⅔ cup Ranch Dressing
Instructions
- To cook the chicken, turn on the Instant pot and select the Sauté button. Then place the chicken breast into the pot, cover with the hot sauce and water, and give it a quick stir.
- Cancel the sauté button (without actually using the function), select the PRESSURE COOK button on HIGH PRESSURE for 15 minutes to cook the chicken. (Make sure the valve is in the SEALING position and the lid is secure).
- Once the pressure-cooking cycle is over allow pressure to release naturally for 10 minutes then you can quick release pressure by manually moving the valve from the SEALING to the VENTING position. Select the CANCEL button and take the lid off carefully.
- Transfer the chicken pieces to a large bowl or cutting board for shredding.
- Next, select the sauté button and add the cream cheese, shredded cheddar, and ranch dressing. Stir the ingredients until they sauce is smooth and the cheese(s) have melted. Then return the shredded chicken back to the pot and stir to mix well,
- Let the mixture simmer for a few minutes (until the cream cheese melts completely).
- To keep the dip warm for serving, simple set the keep warm function and stir occasionally as needed. You can the dip with crumbled blue cheese and spring onion and serve with crackers, tortilla chips, or veggie sticks.
