Tips for making homemade marshmallows.
This recipe works well with a rectangular glass baking dish. However, it is a good idea to double prep the baking dish with both butter with dusted powder sugar on top.
More tips for you
- Instead of greasing the pan with butter you can line it with parchment paper. I would however, suggest that you prep the parchment paper with nonstick spray.
- If you have difficulty distributing the mixture evenly in your prepared baking dish, try wetting your fingers with a small amount of water and pressing the mixture into place. Another option is to use a greased spatula or scraper to gently distribute the ingredients for setting.
- When cutting the marshmallows into squares, your knife can get sticky which can make it difficult to cut. Spray a bit of nonstick spray or or grease the knife with butter to make this easier to do.
Personalize homemade peppermint marshmallows.
There marshmallows are tasty and festive just the way they are.
However, you can take yours up a notch.
Try one of these ideas.
- Top or add festive sprinkles.
- Use a rimmed baking sheet to set your marshmallows in and then cut out shapes using cookie cutters.
- Instead of peppermint extract, use another flavor such as eggnog extract.
- Wrap the marshmallows as individual servings to give out to others or place the marshmallows in a festive jar (like mine).

To make this recipe we will start by activating the gelatin in water.
While the gelatin is preparing, we will heat the sugar along with other ingredients to make a candy. Then we will combine the ingredients before transferring them to a prepared baking dish for setting.
Ingredients needed to make homemade marshmallows.
- Powdered Sugar. The powdered sugar is used for dusting to prevent sticking. You can also dust your finished marshmallows with it.
- Gelatin. Unflavored gelatin should be used.
- Water Cold water is combined with the gelatin to make the base of the structure for the marshmallows. Room temperature tap water is also used in this recipe.
- Granulated Sugar. Added for sweetness.
- Corn Syrup. Adds to the texture making the marshmallows soft and fluffy.
- Candy Canes. Broken up for a festive look and taste.
- Peppermint Flavoring/ extract. Either can be used to add that minty flavor to your marshmallows.
- Food coloring. My marshmallows were color with Red Americolor Food Coloring.
How to make this Peppermint Marshmallows Recipe
Step One: prepare.
Line an square (baking dish or pan) with parchment paper. Then lightly spray the parchment paper with nonstick spray and dust with a tablespoon of the powdered sugar. Also, place the cold water in a mixing bowl for a stand mixer and then sprinkle the gelatin over it.
Expert Tip 👉 You can spray a small amount of nonstick on the baking dish before placing the parchment paper in it. This will help to hold the paper in place.
Step Two: cook ingredients.
- In a saucepan, over medium heat, combine together the granulated sugar, corn syrup, peppermint and the remaining water.
- Stir the ingredients until the sugar dissolves then increase the heat to bring the mixture to a boil. Do not stir.
- Allow the ingredients to boil until the bubbles begin to pop slowly or a candy thermometer reads 220 degrees.
(takes about eight to ten minutes). - Once you get to that bubbly stage, turn the mixer (with the bowl of softened gelatin from the first step) on to low speed.
- Remove the bubbling mixture from the stove and then carefully and slowly pour it over the softened gelatin in the mixing bowl.
- Once all of the mixture is in the bowl, increase the speed to high and beat until the mixture is white in color and about tripled in volume (about ten minutes).
- Add the mint flavoring and continue to beat for another minute.
Step Three: finish making the marshmallows.
- Carefully remove ¼ cup of the marshmallows and place it into a bowl. Add a few drops of the food coloring to turn the mixture red.
- Transfer the uncolored (white) portion of the marshmallow mixture to your prepared baking dish.
- To decorate the white marshmallows, drop spoonfuls of the red marshmallow mixture randomly on to the white marshmallow mixture. Then use a butter knife to swirl it to create a design.
- Allow the marshmallows to sit uncovered until set (about eight hours at room temperature).
- To slice the marshmallows, use the parchment paper to lift the marshmallows from the pan. Then use a large knife or rocker pizza cutter to cut the marshmallows into squares.
- Sprinkle or toss the remaining powdered sugar and enjoy.
Expert Tip 👉 Store the marshmallows in an airtight container at room temperature for up to five days.
