    Easy Rolo Cookie Bars Recipe

This is a simple recipe for making basic cookie bars that have Rolo candy added to them.

I like that when you bite into these bars you are met with the gooey caramel center of the Rolo candies which seem to melt in your mouth while you are munching on the cookie surrounding it.

Did you see my Chocolate Chip Watermelon Cookie Cake ?

That cookie cake is a crowd pleasure partly because it is decorated to look like a watermelon. Like with this candy cookie bar recipe, that cookie cake is especially fun to share with others at a gathering such as a picnic or tailgate party.

To make this recipe you will need Rolo candies. You can find a selection of Rolo candies here.

Tips for making this rolo candy cookie recipe.

Sometimes people like to chill or freeze candies before adding them to a recipe such as this one in order to keep the candies intact when baked. In this recipe however, freezing the candies can alter their texture because of the caramel filling which can harden.

    More tips for you

    1. Unwrap your Rolo candies before starting this recipe and allow them to sit at room temperature while you work. This will help to soften the caramel and add to the gooey texture added to the bars.
    2. When transferring the cookie dough to the baking dish try not to press down too hard on the dough as it will contain whole candies. Instead, lightly press down on the dough while evenly distributing it in the pan.
    3. Lastly, using a toothpick to test for doneness may give false results as there is melted candy in the cookie bars. Rolo Candy Cookie Bars are best when slightly underbaked as overbaking them as the caramel centers will continue to firm up as they cool.

    Personalize these candy cookie bars.

These cookie bars are really tasty and easy just the way they are. You can however make yours even better.

    Try one of these ideas.

    • Look for special edition candies, such as white chocolate or dark chocolate salted caramel, during the holiday season.
    • Instead of or with the Rolo candy, use another candy such as Reese's mini cups.
    • Throw in a cup of chocolate chips to make this recipe even tastier!

How to make Rolo Cookie Bars

    16-20 bars
    Prep time 15 minutes
    Cook time 20 minutes
    Cooling time 1 hour

    Step One: prepare.

Preheat your oven to 350 and prep a baking pan for nonstick. Parchment paper was used to make my bars. Also, unwrap your candies and carefully slice them in half.

    Step Two: make the batter.

    • In a medium bowl, use a whisk to combine together the flour and the baking powder. If you are using unsalted butter, add a half teaspoon of salt to this bowl as well.
    • In a mixing bowl, beat together the softened butter and the sugars (granulated and brown) until creamy. Then beat in the eggs and the vanilla extract.
    • Add the dry ingredients from the first bowl to the mixing bowl and mix until just combined. Then use a rubber spatula to fold in half of the halved unwrapped Rolo candies.
    • Transfer the mixture to the prepared baking dish and use the spatula or your hands to gently press the dough in place so that it is evenly spread throughout.
    • Place the remaining candy on top of the dough, gently pressing them in so that part of the candies are still exposed.

Step Three: finish making the cookie bars.

Bake the cookies for 20-25 minutes or until they begin to turn golden brown. A toothpick test may give a false negative if it is used in the candy portion of the cookie bars. Lastly, allow the cookie bars to fully cool before slicing them into servings.

Expert Tip👉 Store these cookie bars in an airtight container at room temperature for up to five days.
These cookie bars are suitable for freezing for up to three months. It is a good idea to first defrost the cookie bars at room temperature before enjoying.
