- Unwrap your Rolo candies before starting this recipe and allow them to sit at room temperature while you work. This will help to soften the caramel and add to the gooey texture added to the bars.
- When transferring the cookie dough to the baking dish try not to press down too hard on the dough as it will contain whole candies. Instead, lightly press down on the dough while evenly distributing it in the pan.

These Rolo cookie bars are made using a basic cookie dough dough recipe that is packed with Rolo candies. Instead of baking the cookie dough as cookies, it is baked in a baking dish and then cut into bars..

- Spread frosting over the cooled bars and serve it as a cake.

Ingredients needed to make cookie bars with Rolo candy.
- Flour. My cookie bars were made with regular all purpose flour.
- Baking Powder. Added for leveaning.
- Butter. Your butter should be softened to room temperature. If you are using unsalted butter, add a half teaspoon of salt to the flour.
- Both Granulated and Brown Sugars. Use packed light brown sugar for the brown sugar.
- Eggs. Your eggs should be at room temperature.
- Vanilla Extract. Added for flavor balance.
- Rolo candies. The candy should be unwrapped and sliced in half.
Expert Tip👉 Add a up to a cup and a half of chocolate chips to these bars to make them into chocolate chip cookie bars!
How to make Rolo Cookie Bars
16-20 bars

Cook time 20 minutes
Cooling time 1 hour
Step One: prepare.
Preheat your oven to 350 and prep a baking pan for nonstick. Parchment paper was used to make my bars. Also, unwrap your candies and carefully slice them in half.
Step Two: make the batter.
- In a medium bowl, use a whisk to combine together the flour and the baking powder. If you are using unsalted butter, add a half teaspoon of salt to this bowl as well.
- In a mixing bowl, beat together the softened butter and the sugars (granulated and brown) until creamy. Then beat in the eggs and the vanilla extract.
- Add the dry ingredients from the first bowl to the mixing bowl and mix until just combined. Then use a rubber spatula to fold in half of the halved unwrapped Rolo candies.
- Transfer the mixture to the prepared baking dish and use the spatula or your hands to gently press the dough in place so that it is evenly spread throughout.
- Place the remaining candy on top of the dough, gently pressing them in so that part of the candies are still exposed.
Step Three: finish making the cookie bars.
Bake the cookies for 20-25 minutes or until they begin to turn golden brown. A toothpick test may give a false negative if it is used in the candy portion of the cookie bars. Lastly, allow the cookie bars to fully cool before slicing them into servings.
Expert Tip👉 Store these cookie bars in an airtight container at room temperature for up to five days.
These cookie bars are suitable for freezing for up to three months. It is a good idea to first defrost the cookie bars at room temperature before enjoying.
